Tender Barbecued Chicken

AWESOME!!! I used boneless, skinless chicken breasts and legs. Left out the lemon, but it turned out fantastic! The onions are great on top of the chicken. LOVE IT!

Thai Chicken Pizza with Carrots and Cilantro

Wonderful! Of course, I have my changes due to diet. Used whole wheat pizza dough and barbequed it directly on the grill for 10 minutes at 400 degrees. Added a small amount of part skim mozarella, as well as a handful of bean sprouts. Neighbors loved it and asked for the recipe!

Slow-Cooked Habanero Chili

Three modifications make this fantastic. Add 2 tbsp. chili powder, a chopped onion (I think it was accidentally omitted from the original recipe, given the instructions referencing onion mixture), and, instead of a habanero, I had habanero hot sauce and added two teaspoons. FANTASTIC. And very easy.

Grilled Bacon Jalapeno Wraps

I use the ice water overnight, stuff them, and once I turn them on the grill, I brush them with BBQ sauce. My husband had been missing out until I did that. He didn't believe me that they weren't spicy. And anything with BBQ sauce is a winner. Now I just wish I'd made more!

Linda's Lasagna

Excellent! I am coming off a popular diet that helped me lose 27 lbs, and I needed a healthy lasagna recipe. I used whole wheat noodles, ricotta instead of cottage cheese, Italian flavored turkey sausage, and low fat mozarella. I halved the cheese. I used the slow cooker idea from another reviewer for the sauce. FANTASTIC. My husband was thrilled. He never takes left-overs to work, but a big chunk was missing from the left-overs this morning. This one is a keeper!

BBQ Pork for Sandwiches

Fantastic! I didn't have beef broth on hand, but had lots of beer. So I did what another reviewer did and used beer instead. Came out great! I'm also dieting, so to limit my intake, I had mine on two large whole wheat crackers.

Wonderful! I took the advice of one reviewer and used chicken broth instead of water, and I added chopped celery and garlic. Only needed on package of biscuits. Couldn't get enough!

Baby Back Ribs

All I can say is WOW. Used 1 cup of red wine instead of one of the cups of water. Also used bottled BBQ sauce with honey rather than mix my own. Enough for pulled pork sandwiches tomorrow!
