Zucchini Soup with Herbs
Tried this soup and I found it tasty. I did not have but 2 zucchini but had everything else. I will make it again the way it is. I did add salt but that is personal taste.

Chunky Chicken Noodle Soup
My husband decided to make this for dinner and it is delicious. He added some peas and a minced clove of garlic. It is now one of our favorites. We use whole wheat noodles as well. He also used left over turkey which we had in the freezer from Thanksgiving which we needed to use up.

Mexican Ghoulash
I made this for dinner tonight and it was wonderful. I scaled it down to 3 servings and added 2 Tblsp taco seasoning mix only because we like spicy. This is a keeper. I used American cheese only because I didn't have the Velveeta and it was yummy. Served it with a toss salad.
