Sweet Potato Apple Scallop
Best sweet potato recipe ever! Everyone had 2 or more helpings - even son, who has never cared for them. I made this the day before Thanksgiving, then nuked them to reheat. Used my orange zest instead of extract, which made them zing.

Quick Poached Salmon with Dill Mustard Sauce
Oh, m'gosh! Delish! Didn't have yogurt & used mayo. DO WATCH poaching time. I've found that 5 min/inch for the thickest part is quite sufficient to fully cook thru, yet not dry out.

Braised Lamb Shanks
Delish! Love the flavor. Adding a bit more brown sugar, or cutting down on the vinegar really does the trick. Too bad Lamb Shanks are not always readily available in my area.
