High Protein Peanut Butter Balls

Decreased PB to 1 cup and added only 1 banana since it was very ripe. Used Valencia PB with flax seeds. Will make again and again. Would also be good with vanilla protein powder.

Spinach Bars

Delicious! To make healthier, I used whole wheat flour and cut back the cheddar cheese to 2 cups. I then sprinkled the top with feta and parmessan. Prior to combining, I sauteed the onions, garlic and mushrooms. I also used a 16oz bag of frozen cut leaf spinach. will definitely make again!

Healthy Banana Cookies

I give this a 5 star due to the taste and overall nutrition. This is MOIST, so do not expect a crunchy cookie. I used the 3 ripe bananas, vanilla extra, 1/2 cup honey, added cinnamon to taste, salt to taste, subbed applesauce for oil, omitted dates, used 2 cups oats, and added 1/2 wheat germ. These do not spread, so you must pat down to desired thickness. Next time I will add mini chocolate chips. Will also try somehow adding peanut butter as well.

Turkey and Quinoa Meatloaf

I am giving this a four star due to the potential of this dish. I took reviewer's advise and used two eggs, so my dish was firm and kept the shape. I doubled the topping and used half tomato paste and half ketchup. Still very bland dish. A spice is missing, and I can not place my finger on it. I MAY try this again simply due to the healthy factor. I will try adding mushrooms? zucchini? more onion? herbs?

Apple Enchilada Dessert

This was WONDERFUL! I used fresh apples - sliced and sprinkled with cinnamon and sugar, and added @1Tbsp butter - i then microwaved until desired tenderness. I then followed the advise of other reviewers and added cornstarch and powdered sugar. For the topping I followed the directions. They turned out golden brown. will definitely make again.

Slow Cooker Apple Crisp

I made a ton of revisions - and I loved it! the base was basically the same (but i doubled/tripled the amount of apples). For the topping I used almond meal, and 2/3 cups total of sugars, i only used cinnamon, and to taste. Used real butter so there were no artificial ingredients. I cooked on low for @6 hours since I used a apple corer/wedger and the pieces were kinda large. OH - also added @3/4 cup oats.

Restaurant-Style Santa Fe Pasta

I was SO disappointed with this recipe due to all the rave reviews! I began this dish friday late afternoon for a Saturday party. by Friday night it was absolutely dry and flavorless. Fortunately I was able to save this dish by adding TONS of balsamic vinegar, garlic powder, salt and some sugar (splenda). After these additions, and loads of italian dressing, this dish was a success.

Curried Quinoa Salad with Mango

I love this recipe! I use low sodium chicken boullion (sp?), and last time I just dumped in the powder after cooking in water. Even my kids love this recipe - super healthy and super easy! Hint - I use frozen mangos, which makes the recipe easier and cheaper.

Carmel's Crunchy Pea Salad

A hit at the cookout. used @3oz packaged bacon bits, two green onions, sour cream w/ @2 tbsp mayo (low cal), sprinkled @3 Tbsp ranch dressing and 1 cup celery. will add more celery and some hard boiled eggs. Great! *have made this numerous times now. I am now subbing Greek Yogurt for the sour cream. also adding tons of celery and cabbage. no cashews. also fresh dill and basil. TASTY!

Feta Shrimp Pasta

Five stars with a lot of revisions. Added chopped zucchini to the shrimp saute. Used Italian dressing instead of butter for added flavor. Used green onion instead of white. Squeezed half a lemon into the mixture. Also added about 1/2 cup to 1 cup of milk for extra creaminess. also added old bay seasoning to the shrimp. OH - used bowtied pasta. I was told that I MUST make this meal tomorrow. WONDERFUL AND QUICK TO MAKE!!!!!! Added note: I have been making this for several months now. Have subbed chicken, added sauteed frozen veggies, and have yet to complain about the meal.

Double Almond Chocolate Chip Cookies (Gluten-free)

Love the cookies! I subbed 1/2 the oil with applesauce. Glad I did not add the sliced almonds since these were very tasty with the omission. Cooking time was @20 minutes. Just sweet enough!**update - left out the choc chips and added cinnamon. delicious!

Sister Schubert's® Sloppy Joes

LOVE this recipe. I used 2 lbs beef and added a little extra onion and peppers (I also added celery). there was plenty of sauce to spare, so next time I will load it up even more with veggies. very tasty! One tip to make this recipe more lean is to rinse the beef off with water in a colander (after browning).

Zucchini Spread

I changed this recipe a bit. Toasted almond slivers instead of walnuts. Tasted bland so added fresh dill. Very refreshing taste. served with veggies and crackers. Will make again.

Pumpkin Chocolate Chip Cookies III

I have to confess that I am not too thrilled with these cookies. However, my kids love them, and the playgroup gang loved them as well. This definitely is a healthier way to satisfy the sweet tooth. I used 1 smaller can of pumpkin and doubled all ingredients. I only used 1 1/2 cups suger. I also used 1/4 cup veg oil and subbed no sugar applesauce for the remainder oil. Also used whole wheat pastry flour and omitted the baking soda. These cookies did not spread, possibly b/c of the pastry flour. Will make again!

Roasted Garlic Cauliflower

YUM! Side dish with Artichoke Chicken. The only thing I did different was cover with alum foil for the first 10-15 minutes. I then stirred and broiled on high. Think with my oven temp I could've gone without covering first since they were a tad bit mushy. Still great and I will make again!

I thought these were pretty good. I added Old Bay Seasoning. Served as an appetizer for a wine party over mesculin salad with a vinagrette. was a hit!
