Belles Hamburger Buns

To make it easier I used powdered milk so I didn't have to scald it. I just doubled the warm water activated my yeast and then added 2/3 cups milk granuales. The buns were soft, moist and perfect for the burgers. I wasn't paying attention to what I was doing and accidentally added the yolk the dough and it still turned out great.

Pasta with Scallops, Zucchini, and Tomatoes

This is a good recipe but I made a couple of changes. I seared the scallops and topped the pasta with them instead of cooking them in the sauce. I also added some red bell pepper with the zucchini. I'd only use fresh basil with this recipe.

Chocolate Lovers' Favorite Cake

I used this recipe to make cupcakes for my daughters birthday. They were great! Since I live in a high altitude I added 1/4 cup of flour and 1 tbsp of water to keep the cupcakes from sinking. I replaced 1/2 of the butter with applesauce. and baked them for 22 min. each. VERY RICH!

This is a good recipe. After Making it I added a little extra cocoa to make it richer. I used regular milk instead of evaporated. I'll make this again.

Chili I

My husband wont let me make any other chili. He begs and begs me to make this. So I make a gigantic batch and freeze it. That way I can have some on hand when ever he gets that crazed "I need chili" look in his eye.

Slow-Cooker Chicken Tortilla Soup

This was watery and bland. It seemed pointless to use whole red tomatoes. It was like having red ping pong balls in corn, enchilada water. I don't understand why people are giving it such good ratings. It wasn't authentic or flavorful at all.

Creamy Tomato And Cream Cheese Soup

This soup is great if you do the following. Double the basil and add a bay leaf and some cayenne to the current spices listed. Then instead of using a food processor, put the cream cheese in the blender with a Tbsp. of milk, blend, then add the prepared soup to the cream cheese mixture one cup at a time until pureed. I like my soup a little chunky so I leave a little bit of unpureed soup in the pot then I combine them. I used fresh tomatoes that I skinned and seeded. I had a ton of them this fall. mmmmmmmmmm what a great way to use them, in a nice creamy soup serve with a grilled cheese sandwich. An absolute Keeper. It froze pretty well too, it didn't curdle like most creamed soups, so I can eat it all winter long.

Chocolate Chocolate Chip Cookies I

Great cookies! I used half butter and half butter flavored shortening. My butter was salted so next time I'll either reduce the added salt or omit it all together. I also used mint chocolate chips. SUPER YUMMY!. Maybe next time I'll try peanut butter chips.

Ultimate Double Chocolate Cookies

ummmmmmm..... yeah couldn't stop eating them. Amazing I was forbidden by my husband to ever make them again. HA! like that will ever happen. I used 2 cups semi-sweet chocolate and 2/3 cups special dark chocolate chips. Then I threw a couple not-melted dark chocolate chips in the finished batter before baking. We don't drink coffee, I don't have any in the house so I omitted it. absolutely sinful!

Baked Bar-be-que Chicken

I used chicken breasts that were pre frozen in bbq sauce. I cooked it in a crock pot and shredded it for sandwiches. I wanted a little more sauce but I ran out so I added a little brown sugar and russian dressing. It was yummy.

Pizza Casserole

Great recipe.... I'd give it 3 stars cause I'm not a casserole person, but my hubby and kids love it so much that I have to give it 4. It could use some more spice, maybe some chili pepper flakes. It was also good with some parmesan and olives.

Pumpkin Whoopie Pies

The cookie was very soft and moist. I didn't like the way they looked so I piped cookie dough pinwheels onto the pan instead of dropping them with a spoon. It looked much nicer! I'm used to whoopie pies with a thicker frosting, so I give the cookie 4 stars but the icing 3 stars. Next time I'll either add more sugar to make the icing more dense or I'll use a different recipe. Either way I'll still add a little maple flavoring in the icing, it really compliments the pumkin flavor of the cookies.
