Mini Pineapple Upside-Down Cakes

We made these this weekend for our Girl Scout Hawaiian Days and they were a great hit. They are even good the next morning cold. :) We did two things different. We used crused Pineapple and no cherry. They were so pretty and so good.

Laura's Unbelievable Chicken and Pasta

Oh my goodness this was so good. I did change a little. I added about 1/2 cup of frozen peas, no spinach, and about 1/2 a bag of frozen broccoli, and about 1/2 a cup of sliced mushrooms. I will definently make this again.

Coconut Poke Cake

I had this at an ofice party today and it was amazing. This will most definitely be at our Christmas table.
