Serbian Ground Beef, Veggie, and Potato Bake

My family loved this! I drained the ground beef and did not add the olive oil. I used two carrots because I was out of green pepper. I noticed it was quite dry before I put it in the casserole, so I added enough sour cream to make it moist enough to bake without drying out. I used about six smaller potatoes. The crispy potatoes combined with the creamy filling was delicious!

Butternut Squash Bisque

This is awesome. Since I am knife challenged, I split the squash and scoop out the guts and cook in a 350 oven for about 30 mins per side. After the first 30 minutes I start making the soup. When the squash is done, I let it cool, then scoop into the soup and mush it all with a potato masher. I usually use half and half instead of the cream. A very good recipe.

Pineapple Upside-Down Cake II

I gave this a five star rating, assuming the amount of butter was incorrect. I used 1/2 cup butter total. I little more than 1/4 cup for the cake and the remainder for the topping. I used 1/2 milk and 1/2 pineapple juice for the 3/4 cup milk. This cake was okay the day I made it, but it was awesome the next day. So, if you need a make ahead dessert with ingredients you have on hand, this might be the ticket!

Angel Biscuits II

After reading all these reviews, I guess you will either love these or not care. Unfortunately, I fell into the latter. The ratio of wet to dry made a very wet batter that I could not knead nor roll out. I ended up making drop biscuits as I was out of flour after the five cups called for in the recipe. On the plus side, these made a lot. On the negative, mine never rose, they burned on the bottom and were somewhat undercooked in the middle.

Green Tomato Mincemeat

This is really great! I scaled the recipe back to 4 servings to make and see if we liked. I didn't have any oranges so I put in more lemon. I used it to bake a pie and it was awesome. I plan to make more and freeze it instead of canning. I did cook uncovered for the last hour because it was really juicy.

Pumpkin Apple Streusel Muffins

Oh so very good! The batter is thick, but resist the temptation to add more liquid. It turns out fine as written. As far as the topping goes, pay attention as the recipe calls for 4 teaspoons of butter. I suppose if you put in 4 tablespoons, it would be too much. Thank you Jan!

Garden Fresh Tomato Soup

The bad news, then the good news. I did not care for this at all. Perhaps I have been stunted by canned soup. The good news is that this is a very well written recipe that the rest of my family enjoyed. It is very easy to make and everyone else loved it. I will definately make again!

Caramel Popcorn

Great recipe! This works great with 2 bags microwave popcorn. Hints for easier clean up: foil wrap the two pans and spray with Pam. Pour the popcorn directly into the pans, pour half the sauce over each and mix right in the baking pan. Wash the sauce pan IMMEDIATELY before the caramel hardens. Oh so good!

Zucchini Brownies

These turned out great! I added the zucchini to the wet mixture and these turned out very moist. Did not make the frosting, I didn't think they needed it. I agree with Angela Sims. That is my biggest pet peeve, when people change the recipe, then give it a poor rating. How is that helpful?

Delicious Ham and Potato Soup

Very good and pretty easy. I added some carrots and green pepper as I didn't have much ham. Topped with some shredded swiss cheese and it was awesome! Thanks for a great recipe.

Potato Leek Soup I

We thought this was awesome. I made it last night and my husband and older daughter loved it. The younger kids didn't rave as much. I used vegetable stock (didn't have chicken) and 1/4 cup butter- all I had on hand. After the potatoes were done, I used a potato masher to smoosh them and kept some chunks. I had some today with bacon and romano cheese on top. Excellent recipe, Eleanor!

Mediterranean Pasta

We really enjoyed this recipe. I cooked the bacon and chicken together with some garlic and drained the grease before continuing. I added two cans of tomato to make it stretch a little further. Then I got scared that I had ruined the recipe, but after 20 mins at a simmer it had cooked down and wasn't so juicy. This was so very, very good!

Naan

I like to bake bread, so I didn't think the prep time was any big deal. We cooked it on the grill and it turned out great. I was pretty proud until someone commented that it tasted a lot like biscuits. And it did. I think next time I will cut the amount of sugar to get a more bread like than biscuit taste. Don't be afraid of using the grill to cook, it really works.

Suki's Spinach and Feta Pasta

This is sooo good! I am a feta cheese freak and this sure fit the bill. I made with store bought tomatoes and it was great. I am anxiously awaiting our crop because this recipe will be amazing with fresh, home grown tomatoes. The kids liked it as I served it to them before adding the feta. They did not realize it contained spinach. I said it was "baby greens." Thank you, Suki!

Marinated Cheese

I made this for an appetizer for the 4th of July. It was very, very good. I substituted low fat cream cheese and it kind of melted into a blob, but a very delicious one. The cheddar held it's shape well and was very good plain or on a cracker. If it's warm and you want a good presentation, serve on ice. But it is so good, no one will really care what it looks like. Thanks!

Fresh Asparagus Soup

Absolutely awesome! Used low sodium chicken broth instead of vegetable broth and 1% milk instead of soy. This recipe motivated me to freeze some asparagus while it's in season so we can enjoy this year 'round. Thanks Nanook!
