Eclair Cake
I served this at a holiday party and a lot of people enjoyed it. But, for me, it was way too sweet with the thick chocolate frosting on top. If I make this again I will drizzle the frosting on (warming it slightly first) and not have the frosting cover the whole thing. Also, it is best served ice cold.

Asian Lettuce Wraps
We love this recipe! We use ground chicken or ground turkey and add shredded carrot and fresh minced ginger. These are also great in warmed soft flour tortillas for a more hearty main dish.

Shirley's Maine Clam Chowder
I added garlic, salt, and cracked pepper. I used 3 cans of chopped clams in place of what was called for in the recipe because I did not have access to shucked clams. My family loved this recipe. It was a little "ligher" than a traditional clam chowder and we liked that. We will make this again.
