Apricot Lentil Soup
This soup was lucious! It is now one of our favorites! I did not have fresh tomatoes so I added a 15 oz. can of plain diced roma tomatoes which I had drained. I also did not blend any of the soup. I like the lumpy texture, although it was still pretty smooth. One thing that helped was I used my own homemade broth made from the carcass of a whole fowl after I removed most of the meat. I think this adds more flavor rather than using canned broth. This is a somewhat pricey soup with the apricots and everything but well worth it.

Always A Winner Potato Salad
Delicious! Everyone loved it! Best recipe I have tried for potato salad.

Homemade Horseradish
Wonderful! We grow our own hoseradish and this is a very nice easy recipe. If you want to make small batches as we do, it works fine. Nothing beats the fresh stuff!
