Meatloaf With A Bite
I kicked it up a bit at the end. Once it was done cooking I topped it with a mixture of 3T ketchup and 1T Srirracha and then browned it under the broiler. I also used a mixture of a 4-cheese Italian blend and Sharp Cheddar instead of the cheese called for as that was what I had on hand.

Baked Kale Chips
The easiest way to cover the kale with the oil is to put the prepared kale in a ziploc bag with olive oil, close the seal and "massage" the oil into the kale. Sprinkle with whatever seasonings you enjoy after removing kale from bag

Mexican Casserole
Made it as listed with exception of adding a tsp of cayenne to the mix and some diced cilantro with the last layer of cheese. The only thing I DID change was to make it in an 8x8 pan. I can't imagine how thin it would be had I used the 9x13 pan recommended. I'll definitely fix again as it was a hit, easy to make and has stuff I always have on hand
