Beer Cheese Soup II

I got quite a few compliments on this one. I read other reviews that had difficulty with the consistancy of the soup, so I didn't mess around with it. I used a 1/2 cup of butter to fry the onion/garlic, then I added flour to make a roux and thinned it out with chicken broth. After I had a base that had some thickness to it, I transferred it to a dutch oven and added the half-and-half, worcestershire, beer and cheese. We didn't love the taste of it the next day, it was almost like it went a little sour in the fridge, but the first day I served it, it was great.

Baked Pineapple Casserole

This was different, but good. It's really a pinapple flavored bread pudding. I used slices of fresh pinapple on top for garnish and I think that helped to get people to try it. Otherwise it doesn't look very appetizing. I added quite a bit of cinnamon and nutmeg as suggested by other reviewers. When I first pulled it from the oven I was a little disappointed because it looked greasy from the butter. Fortunately I still had to cook another dish and I let it rest for a bit on the stove before serving and the butter seemed to soak back into the casserole. I don't think I'll put it in rotation, but it's a nice recipe for something different.

Lemon Square Bars

I'm not sure what I did, but my crust was hard as a rock and I actually had trouble cutting it. Still giving 3 starts because it was probably my fault-- because I wanted to have a lot of lemon filling, so I baked it in a 7x11. I should have baked it in a 9x13 and doubled the lemon ingredients instead. Live and learn

Strawberry Romaine Salad I

This recipe was pretty good, but I would suggest only making what you think your crowd will actually eat - or keep the dressing on the side. I dressed the salad and that made the leftovers very soggy and gross. I used toasted slivered almonds instead of poppy seeds.

Chicken Pot Pie IX

I made this for a Mother's Day gathering and it turned out better than expected. I was feeding a crowd so I used a 9x13 instead of a deep dish pie plate. I used a can of cresent dough for the bottom crust and baked it about 10 mins (till golden brown) prior to adding the chicken mixture. I was in a rush so I just used frozen mixed veggies, but then used real onion & celery for some freshness. I also added poultry seasoning and garlic powder as suggested by other reviewers. I used the two pie crusts on top and just overlapped them. I didn't look perfect, but it tasted awesome. I didn't have many leftovers, but they tasted great too---I was a little concerned about the crust getting soggy, but it held up just fine. Excellent "base recipe".

Broccoli and Tortellini Salad

Very good pasta salad. I added shredded cheddar cheese to it (can't have too much cheese) I made it for Thanksgiving so I also substituted craisins instead of raisins. I also made it the night before to get the flavors to blend, but it got a little dried out, so I ended up adding an addtional 1/4 cup of mayo. Very flavorful and nice crunch to it.

Key Lime Pie VIII

Great recipe! Very quick and easy. I used a shortbread crust instead of the pie crust. I also whipped in softened cream cheese to cut down on the tartness of the flavor but carefully blended in some lime juice into the extra cool whip to get the lime flavor throughout the pie.

Tropical Tuna Melts

Excellent--quick and easy recipe for a chaotic week night. I used toasted Thin Buns (Earth Grains brand) instead of the english muffin, crushed pinapple instead of the rounds, and Havarti cheese instead of American.

Mini Ham And Cheese Rolls

I made this recipe for a bridal shower. There wasn't any leftovers so that is a sign of a good recipe. I used the Hawaiian rolls from the deli section for this recipe. Yummy!

Cheese Dip with Beer

I just made the dip part of this recipe. I used a wheat beer and served it with sections of soft pretzels I bought in the freezer section. I also did it in the nuke and then put it in a small crock to keep it warm during the party. Great and easy recipe!

Ratatouille

This was interesting...I had never made Ratatouille before. I think I went a little overboard with the veggies, I got towards the end of my chopping and the 9x13 was piled pretty high. I also think that I may have baked this too long. It was a little on the mushy side too. It was a lot of chopping, but worth it.

Grandma's Heavenly Onions

I made this as "something different" for Christmas this past year. It didn't go over very well because it didn't look that great, and I have so much to choose from at Christmas. It tasted pretty good--maybe a little salty and a little mushy, but good.

Slow Cooker Creamed Corn

I was hoping this recipe would be a slow-cooker version of our family's scalloped corn--but it's not. I guess because I was hoping for a different taste and texture, I wasn't very happy with the recipe. I would say that it's okay, but the old fashioned corn, crackers and eggs recipe is what we love.

Double Layer Pumpkin Cheesecake

This recipe is a welcome change to the typical pumpkin pie at Thanksgiving. I added crushed gingersnaps as a garnish on top of the whipped cream. This was very quick and easy recipe and my guests said they loved it.

Slow Cooker Stuffing

I make this every year at Thanksgiving. My family just LOVES it because it doesn't turn out mushy like most stuffing recipes. Because I am so busy on Turkey day I've started to do a "make ahead" version of this. The night before Thanksgiving I put the bread cubes into a huge mixing bowl then I brown up some pork sausage and throw it on top of the bread cubes. Then I melt the butter in the same fry pan and cook the onions, celery, mushrooms and parsley. I put that on top of the bread cubes and mix in all the spices and about a half cup of dried cranberries. I cover the bowl and keep it cold overnight. In the morning I grease the crock, chop up an apple and mix it in along with the eggs. I only use the chicken broth as needed, so it doesn't get too mushy. Then I put it in the crock on high for an hour and then turn it to low until lunch. Turns out perfect every time and I don't have to get up super early to cut up and saute the veggies. We do a deep-fried turkey, so is just a wonderful recipe for us.

Home Style Macaroni and Cheese

I wasn't as happy with this recipe as I thought I would be. I ended up with some hard and crunchy parts on top that were really dry and inedible. I think it needed a punch of something too. I think maybe some garlic might do the trick.
