These cookies are very rich just like Baklava. I could only eat one. My batch made 37 cookies. I soaked in 9x13 pan as suggested here but the top of the cookie will stick to the pan if left longer than 15 minutes. 15 was enough. If you dip the top in sauce and then immediately roll the top on walnuts, they stick on better than if you sprinkled the walnuts. It also holds more of the sauce on top. It was worth trying but not my favorite cookie. I don't think I'll make them again. My rating would be 3 1/2 stars but we don't do halves here. Some call these Easter cookies and they look nice in pastel colored muffin cups. Will post photo. I think these are also called Melomakarona cookies without the alcohol.

Maple Salmon

Cauliflower Gratin

I didn't have swiss cheese or bacon bits so I substitued with 1 1/2 cups motzarell cheese. I Mixed 1/8 cup italian bread crumbs with 1/8 cup japanese panko crumbs and 1 1/2 tbs of melted butter then sprinkled that over the cheese to give it more flavor and crispiness. It came out pretty good. I also used fresh cauliflower cooked in water in the microwave for 5 minutes and drained to soften before baking. I will make again to try it with the fresh bacon and swiss cheese to compare flavors. thanks for the recipe.

Italian Wedding Cookies III

At first I hated this cookie because it was so crumbly. It disintegrated when my teenager went to grab one and I gave it two stars. I thought it was pretty bland but you really have to give it time to cool completely before tasting. This cookie is better on day 3 so make it days in advance of your event. It's less crumbly on the 2nd and 3rd day probably because the butter solidifies a little bit. This cookie grew on me and so I'm going to try bringing it to our Thanksgiving cookie contest and see how people like it. I'll edit this afterwards to let you know. co-workers liked it. I did follow others suggestions regarding salt and making it 1/3 vanilla and 2/3 almond extract. I think I'll try just using all extract next time. I also tried dipping the tops in chocolate and my teen loved it that way better. I will also try putting a chocolate kiss in the center and see how that does in the oven.

Crispy Almond Cookies

I added more almond exctact as suggested but have nothing to compare it to bec this was my first time baking these. I also reduced temp to 350 as suggested. They didn't come out that crispy probably bec I lowered the temperature. I will try leaving it at 375 next time but watch it so it doesn't burn. You can also drizzle chocolate on top or you can place a chocolate kiss in the center. If you bake with the chocolate kiss, the chocolate becomes stale-like so best to place the kisses as soon as the cookies come out of the oven. It's ok without the chocolate too. I refrigerated overnight and the texture was the same as before it went it the fridge so no need to refrigerate. I didn't like how the dough texture was crumbly. It was hard to roll into logs because the dough doesn't stick together nicely. Instead of adding the almonds to the mixture, maybe just roll the cookies in the ground almonds before baking. I've bad better almond cookies than this. My teenagers loved it.

Popularity Cookies

These were just OK. I thought it was too much chocolate on top and too much butter in the recipe. I did bring it to work and my coworker loved it but for me it's a 3-star recipe. I used graham crackers because that's what I had and as I was cutting the finished cookies, the graham cracker fell off some of the pieces. I used cinnamon graham crackers so maybe that's why it fell off, because the graham crackers have a sugar topping that maybe the butter sugar mixture couldn't adhere to. I suggest applying the butter sugar mixture to the back side of the graham crackers if that's what you are using. Still, I prefer almond roca candy to this. I don't think I'll make this again. It's in the refrigerator and no one is touching it. If it were a 5-star recipe, it wouldn't last 2 days in my house.

Cauliflower Side Dish

I thought this was very good. I used chopped onions and I added a tablespoon of olive oil to the mix. It wasn't dry at all. Excellent. My husband and my two teens said it's one of the best ways they've eaten cauliflower. Thanks.

Melt-in-Your-Mouth Broiled Salmon

I omitted the last two ingredients which are herbs and dill. I didn't have white wine so substituted with rice wine. It came out delicious. After all the turning, my salmon didn't hold the shape it was when I started but nobody cared bec the food was good. I tried this for the first tiime and my family didn't miss our previous favorite salmon recipe. Now we have two favorites. Thanks for the recipe.

Spanakopita II

Made this today and it was so good. My daughter and I ate 6 of them. We are making and freezing them for Christmas but couldn't resist the temptation to try them. I used butter-flavored Pam Spray on half of one sheet lengthwise and then fold it lengthwise. then I fold the raw edge about half and inch. then I add the filling. I found doing it this way makes the triangle stronger and also gets rid of the flaking edges. I brushed the top with olive oil on some and butter on some. of course the buttered is better tasting. That's what I'm bringing to the party. Changes I made were to use two medium onions instead of large, based on reviews. I used only 2 eggs. Used 2 1/2 cups feta cheese. and I left out the dill bec we don't like dill. My greek coworker suggested next time that I add 4 green onions to the mixture. I'm sure I'll be making this again and will try that.

Buttery Corn Bread

Easy Corn and Crab Chowder

This was good. I used 4 potatoes bec 1 is not enough for 4 people. I only used 2 tbsp flour and then I added about 1/2 cup of heavy cream bec I needed to use it up. I omitted the wine. Used 1 tbsp of powdered chicken bouillon instead of cube. Just keep adding more milk or crab until you feel it's right. I didn't have bacon so I used about 5 tbsp of real bacon bits and it's a much easier way to deal with the bacon. Will make again.

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

This was good. Don't be tempted to pour the whole can of coconut milk just use the amt called for or it comes out runny. I didn't have tapioca starch so left it out. I don't think it suffered any. Also next time I'll add a little more rice bec some of the rice stuck to the bottom of the sauce pan. The sauce was not needed. Update: I found an easy Microwavable version. Rinse 2 cups of sweet rice in cold water a few times or until water is almost clear then add more water until 1 inch above the rice level or more. Let sit in water 30 mins . Pour out excess water until there is only about 1/4 inch water above the rice level. cover and microwave 10 mins. Now Mix 1/2 can coconut milk, 1 cup sugar and small dash salt. Add this to the rice mixture but only add as much as you need. I left out 1/3 cup of the coconut mixture. Let rice sit for 20 minutes. Rice is done. Serve with mango.

Sweet Corn Cake

I didn't think this deserved 5 stars. It's just ok. It is grainy in texture and falls apart. I prefer corn bread to this. I followed the recipe except I halfed the butter like others suggested. as for the sugar, I lessened it a little but it was still too sweet for my taste. I think I'll stick to corn breads.

Shrimp Francesca

This is a keeper. Family of 4 loved it. I used 2 Tbs lemon juice and used parmesan cheese instead of romano and I used over a pound of regualr-sized shrimp. Everyone had seconds and I wish there was a little more so I'll use 1 1/2 pounds of shrimp next time. We served with buttered vermicelli pasta. We also sprinkled more parmesan over our dish. I followed one suggestion to use half butter half olive oil. My 2 daughters said it's better than the pasta dishes they tried at the Cheesecake Factory restaurant. Delicious, give it a try.

Grandma Johnson's Scones

Of all the scones I baked myself, these are the best. I divided the dough in half and added chocolate chips to one half and left the other plain bec my husband likes it plain. cut up some strawberries and sprinkle sugar on them and set in the fridge. when you are ready for dessert, add the strawberries on top of a plain scone and then top that off with cool whip or vanilla icecream. so good to use this recipe for strawberry shortcake.

Pan Fried Catfish Filets

I am giving this 4 stars bec my whole family enjoyed it although I did change the recipe a lot. I just used seasoned breadcrumbs like one person suggested. it was really good. easy to just dip in milk, dip in bread crumbs and fry. no measuring invovled. try it this way and you will enjoy. serve with white rice and tartar sauce.
