About this Cook
I am a SAHM to an active 3 year old daughter who is a mega picker eater. She refuses to try most things and I am constantly worried about her eating habits. I love to bake more than to prepare meals, but only due to being a somewhat picky eater myself. My husband loves spicy foods, especially Mexican, and I can barely handle adding pepper to dishes. I love the Allrecipes site because it gives me the much needed information I want before trying something new.
My favorite things to cook
I love the holidays because I always prepare goody baskets for my friends as gifts. I am well known for my Banana Bread, Caramel Corn, Peppermint Meringue Candy Canes, and Chocolate Peanut Butter Chip Cookies.
My cooking tragedies
I have tried to make lemon meringue pie 3 times and failed with every atttempt. I tried using different recipes, different pie plates and different baking methods. No matter what, my crust gets watery.

Blueberry Cream Muffins
An excellent and moist muffin. I made the recipe as it stands and feel it is a little bland and not terribly sweet. I think a crumb topping would probably be an excellent addition. I will also try using 1/2 brown sugar the next time around. To me these were the homemade equivalent to the boxed Duncan Hines muffins as far as sweetness and zip goes.

Braised Balsamic Chicken
I did as many suggested and used half balsamic vinegar and half chicken stock, but I think we would like it better with the full vinegar flavor. I added artichoke hearts and garlic cloves instead of garlic salt. Very yummy! Will make again!

Cocoa Banana Bars
Heavenly! A perfect blending of chocolate and banana. I agree about not changing a recipe, but I didn't have the exact ingredients needed; so I did have to improvise. I only had Hershey's Special Dark cocoa, so I added 1/4 cup sugar to my dark cocoa and batter. My 13 x 9 pan was in the dishwasher, so I made cupcakes instead and they baked for 25 minutes. The only reason they lasted 5 hours is because we weren't home to eat them!
