Quick and Easy Yorkshire Pudding

I'm no Yorkshire Pudding connoisseur, but I didn't think too much of these and my kids didn't like them much either. Their complaint: too eggy. I may well be a good recipe and that we just don't happen to like Yorkshire Pudding.

Chocolate Chip Coffee Cake

Very good. Added the 1/2 cup of (unsweetened) applesauce, as suggested, and was very pleased with the crumb. Came together very quickly and easily and had all ingredients on hand. Will definitely make this again.

Veggie Chicken Rice Casserole

After reading the reviews, I knew I'd have to jazz this up a bit. Even with poultry seasoning, onion powder, garlic powder, cheddar cheese, sour cream, and marsala wine, however, this dish was still pretty bland. I might make it again, since it was easy and my kids did eat it without complaining, but only in a pinch.

Lasagna Alfredo

The kids really liked it, and even asked that I make it again sometime! High praise, indeed. I used half jarred light alfredo sauce and half homemade low-fat alfredo sauce, as well as part skim ricotta and part skim mozzarella. When I make it again, I think I'll add minced onions, carrots, and red bell peppers to the spinach mixture and I may leave out the chicken.

Parmesan Fondue

My kids really enjoyed this because the flavor wasn't too strong and it wasn't too salty. I used skim milk, one pkg of 1/3-fat cream cheese, and one pkg of regular cream cheese, and I also added about 2/3 cup of shredded swiss cheese with the parm and a little more garlic than called for. I thought it was a little bland, but it went very well with our variety of dippers. I will make it again, but I may use half beer and half milk next time to give it a little more flavor.

Taco Salad III

I left out the red onion, and used one large can of Bush's chili beans, green leaf lettuce, and Fritos Scoops. While the Scoops held up very well, the green leaf lettuce wilted a lot more than I think the iceberg would have. It was very good, but the leftovers weren't worth saving. I will make it again, but will serve the lettuce separately next time.

Restaurant Style Beef and Broccoli

Delicious. I added red bell pepper, carrots, and onions and I also stirred chopped garlic and ginger paste into the meat marinade instead of cooking them in the oil and then removing. Oh, and my husband and I also sprinkled on some red pepper flakes at the table. I will definitely make this again!

Chocolate Eclair Dessert

A huge hit at the Easter party I brought it to. They practically licked the pan! I used BaysChick's chocolate sauce recipe instead of canned frosting. I also used skim milk, low-fat graham crackers, and light whipped topping. Delicious.

Pork Chops with Apples, Onions, and Sweet Potatoes

I made this with the maple syrup, balsamic vinegar, mustard, and brown sugar sauce that another reviewer recommended, and that was the best part. I cooked it covered at 375 for an hour, but the sweet potatoes (sliced less a 1/4-inch thick) and the onions (even thinner) were still crunchy. If I make it again, I will microwave the potatoes and onions for a few minutes first.

Chocolate Chip Cookie Ice Cream Cake

This was a big hit for my daughter's 8th birthday party. I made it with half vanilla and half cookies & cream ice cream, with a chocolate chip cookie crust. I will definitely make it again and look forward to experimenting with other ice cream and cookie flavors. Oh, and it was super easy to make too!

Chicken Chilaquiles

This is a great, versatile recipe. I made it using leftover flank steak instead of chorizo and chicken and I had only one 10 oz can of green enchilada sauce. It was still delicious. I will definitely make this again.

Last Minute Chicken Dinner

I thought it was just okay; the rest of my family didn't care for it at all. I used marsala cooking wine in place of the milk and stirred in frozen mixed vegetables instead of topping with the carrot/broccoli/cauliflower blend. I thought the marsala was the tastiest part of the dish.

Streusel Sweet Potatoes

Made this for Christmas dinner. I didn't mash the sweet potatoes; I used canned and just broke them up a little while tossing them with the spices and butter. I also added about 1/4 cup of oatmeal to the streusel topping.

Roasted Garlic Cauliflower

I didn't add the cheese, but this was still great. I had some grape tomatoes that needed to be used up, so I halved them and threw them in halfway through cooking. I made this early in the day when I had the oven on for something else, with the intention of heating it up for dinner, and I just couldn't stay away from it throughout the day.

Turkey Shepherd's Pie

My kids liked it and even said I could make it again. That's high praise. I added about 2 cups of frozen mixed vegetables, about 2/3 cup of light sour cream, and about 2 tsp of worcestershire sauce to the turkey mixture, and about 1 cup of shredded cheddar to the top. I also used prepared, instant mashed potatoes because that's all I had on hand.

Spiral Pasta Salad

This was good, but not great. A little too sweet for me. I added some freshly ground black pepper, but it was still missing something. I used diced zucchini, red bell pepper, carrots, and broccoli instead of the veggies called for, so maybe green pepper would have been better. I also used the blender to make the dressing because I know a lot of people don't like raw onion and I was taking it to a party. It went at the party, but no one commented on it or asked for the recipe.

Pork Chop Skillet Dinner

I changed this quite a bit according to what I had on hand: instead of one cup of orange juice, I used the juice from a can of mandarin oranges, some white wine, and some water; I also used roasted garlic chicken broth; and I added frozen french-cut green beans and mandarin oranges at the end. I also removed the chops after browning and sauteed the rice and onions together before adding the liquid and then returning the chops to the pan.
