Chicken Chilaquiles

This is a great, versatile recipe. I made it using leftover flank steak instead of chorizo and chicken and I had only one 10 oz can of green enchilada sauce. It was still delicious. I will definitely make this again.

Last Minute Chicken Dinner

I thought it was just okay; the rest of my family didn't care for it at all. I used marsala cooking wine in place of the milk and stirred in frozen mixed vegetables instead of topping with the carrot/broccoli/cauliflower blend. I thought the marsala was the tastiest part of the dish.

Streusel Sweet Potatoes

Made this for Christmas dinner. I didn't mash the sweet potatoes; I used canned and just broke them up a little while tossing them with the spices and butter. I also added about 1/4 cup of oatmeal to the streusel topping.

Corn Pudding V

Made this for Christmas dinner. I made it as stated for my daughter and spooned out a small ramekin for her, then added one egg and some chopped green and red peppers for the casserole. It was great both ways!

Roasted Garlic Cauliflower

I didn't add the cheese, but this was still great. I had some grape tomatoes that needed to be used up, so I halved them and threw them in halfway through cooking. I made this early in the day when I had the oven on for something else, with the intention of heating it up for dinner, and I just couldn't stay away from it throughout the day.

Turkey Shepherd's Pie

My kids liked it and even said I could make it again. That's high praise. I added about 2 cups of frozen mixed vegetables, about 2/3 cup of light sour cream, and about 2 tsp of worcestershire sauce to the turkey mixture, and about 1 cup of shredded cheddar to the top. I also used prepared, instant mashed potatoes because that's all I had on hand.

Spiral Pasta Salad

This was good, but not great. A little too sweet for me. I added some freshly ground black pepper, but it was still missing something. I used diced zucchini, red bell pepper, carrots, and broccoli instead of the veggies called for, so maybe green pepper would have been better. I also used the blender to make the dressing because I know a lot of people don't like raw onion and I was taking it to a party. It went at the party, but no one commented on it or asked for the recipe.

Pork Chop Skillet Dinner

I changed this quite a bit according to what I had on hand: instead of one cup of orange juice, I used the juice from a can of mandarin oranges, some white wine, and some water; I also used roasted garlic chicken broth; and I added frozen french-cut green beans and mandarin oranges at the end. I also removed the chops after browning and sauteed the rice and onions together before adding the liquid and then returning the chops to the pan.

Chinese Cabbage Salad I

Delicious! I used almonds instead of cashews (I didn't have them) and I added about a teaspoon of sesame oil. I also didn't have time to toast the noodles, but it was still great.

Margarita Cake

I made this cake for tailgating at the Jimmy Buffett concert and it was a big hit. I followed other reviewers' advice and used lemon cake mix and lemon pudding mix and I also added the grated zest on one lime to the cake batter. It was delicious!

Swordfish a la Siciliana

I liked this very much, however, I did make a few changes: I didn't have fresh tomatoes, so I used one can of diced tomatoes; I used only about 7 olives instead of 10 and only about an 1/8 cup of capers; I also used only about half the olive oil called for; lastly I didn't use pine nuts as I didn't have any. My kids only picked at it, and my husband didn't comment either way, but I really liked it and will likely make it again.

Easy Broccoli Quiche

This quiche was a big hit with my girlfriends, but I did make some changes. I reduced the butter to 2 Tbs total, used 2 eggs and 3/4 cup of egg beaters, and I used 1 cup of 1% milk and 1/2 cup of skim. I also used about half swiss cheese and half cheddar, because I didn't have any mozzarella. Next time I make it, I'll reduce the milk by about 1/2 cup.
