Chicken Florentine Casserole

This was really delicious. Please my wife said it was very easy to make. I think it was more like a thick soup than a casserole though. I recommended we eat it on a bed of pasta or rice or even toast next time. I think you could add stuff as well...I think mushrooms and peas would go great with this casserole. It's certainly a keeper though.

Mexican Sour Cream Rice

This really wasn't very good. My wife wouldn't even eat it. I added salsa and ate it as a chip dip. My daughter (3 yrs) ate it, but she made us put peanut butter on it (??). My 20 month old son ate it. It gets two stars because I added the leftovers to some homemade chili and it tasted really good with the chili.

Angela's Alfredo Ham

I made this and now my wife thinks I am a gourmet chef. It tasted excellent. I added green onions and some shrimp. It was easy to make and the kids wolfed it down. This is a permanent addition to our recipe box.

Chicken Rice Mexicana

I had some leftover rice and a green pepper I needed to use up, so I picked this recipe. It was very easy to make and it tasted pretty good. I used green onions because my wife doesn't like regular onions. With a little effort, we got our kids to eat it, even with the peppers. I think it probably needs something else -- maybe corn or peas or some other veggies and definitely more spices. But overall, it was quick, easy and tasty.

Three Cheese Noodle Bake

I thought this was just average. There really wasn't much flavor to it. The kids liked it, which gives it an extra star. I though it tasted better the next day reheated. If I make it again, I will add peas, mushrooms and ham because it reminded me of Zio's Straw and Hay but w/o those ingredients. I will also add green onions and some mild spices to jazz it up a little.

Chili Dog Casserole II

This is a suprisingly delicious meal -- and very simple to make. My three-year old daughter helped make this and had a blast. Rather than spread the first can of chili into the bottom of the dish, we mixed in a little cream cheese and stuffed it into the tortilla with the hot dog. (I also used a smaller baking dish). Everyone loved it. Would have received an additional star, but it sits a little heavy in the tummy -- just the nature of chili dogs I think.

Husband's Delight

I thought this turned out pretty good. After working all day, I am always looking for quick and easy recipes, which makes this one a keeper. It was so simple, even my wife could make it. :) I followed other reviewers suggestions -- browned the meat with the onions, put all the pasta as the bottom layer, added green onions to the sour cream/cream cheese mix, etc. I also thought it was going to be too dry, so I added a can of tomato sauce to the meat and was glad I did. My wife said the taste was excellent, but she's not a huge egg noodle fan so she wasn't overly impressed. My picky three-year old daughter loved it (as did my 18-month old son, but he will eat anything). Next time, I will scale the recipe back for a smaller casserole dish as we had a lot leftover and I will be eating this for lunch for a week.
