Baked Potato Soup
I have made this soup many times...my boyfriend loves it! It is much better than any potato soup I have had in any restaurant. I took the advice of some of the other reviewers and didn't bake the potatoes...I just cubed them and boiled them gently in the broth mixture until cooked thru. I also always use a full pound of bacon...I add about 3/4 of it to the soup, along with some cheddar cheese, after adding the half-and-half---gives it much more flavor. I added some celery with the onions and garlic as well. I garnished it with some of the remaining bacon, cheddar cheese, and sour cream. EXCELLENT!!
