Baked Salmon Fillets Dijon

Enjoyed this. I used 1/4 cup of panko breadcrumbs with 1/4 tsp of thyme and oregano added to it. Melted the butter and mixed with the breadcrumbs before adding it to the salmon.

Crispy Cucumbers and Tomatoes in Dill Dressing

I followed the recipe as written the first time I made it and thought it was good. The dill adds a nice flavor to the salad and provides a twist on the traditional oil and vinegar based cucumber salad. The second time I made it, I used a white balsamic vinegar that I get from Trader Joe's, substituted one of the cucumbers for zucchini, and added a bit more dill and about 4 chopped basil leaves. This salad can be altered by the simple addition of a different herb or a combination of herbs, and it is great served with grilled chicken or BBq ribs.

Rosemary Ranch Chicken Kabobs

Terrific marinade. I didn't use any salt and used 1/2 the amount of oil in the recipe. For my kabobs, I used chicken and shrimp on separate skewers, and they were delicious. Everyone enjoyed them.

Honey Grilled Shrimp

Very tasty. We really enjoyed this dish. I put orange bell peppers, red onions, mushrooms, and green onions on separate skewers and brushed them with italian dressing rather than use the same marinade as the shrimp. Since the worcestershire sauce plays a dominant role in the recipe, I recommend using a good brand like Lea & Perrins. I served the kabobs with steamed rice.

Baked Soy Lemon Chops

Nice flavor. I marinated the chops in the sauce for a couple of hours and cooked them on the grill. Served with roasted garlic mashed potatoes and sugar snap peas.

Crazy Cake

We enjoyed this moist and easy to make cake. Instead of using 2 cups of water, I used 2 cups of brewed coffee that was leftover from breakfast. I'm still amazed that the recipe doesn't have eggs or milk and is so moist. I will have to pass this on to my vegan friends who are always in search of eggless recipes.

Skillet-Grilled Catfish

Delicious spice mix that is perfect for catfish. I didn't do this on the grill since it started pouring down rain so I prepared it on top of the stove. I also sprinkled some of the seasoning mix on both sides of the fish. I served this with greens (mustard&kale), potato salad, and cornbread. I will make this again, and the spice mix is definitely a keeper.

Baked Mac and Cheese for One

Since I was only cooking for myself today, this recipe was right on time. I pretty much followed the recipe except I baked it longer and at 425 degrees because I like my mac & cheese browned on the bottom and edges. The recipe isn't real cheesy but the onion powder and other spices gives it a nice flavor boost. Just taste the cheese sauce before adding the macaroni and if it isn't cheesy enough, just add more. I'm counting calories so I thought it was just right. I used panko breadcrumbs which always add a nice crunch. As I was eating, I thought about adding a little chopped broccoli to the dish when I make it again for a quick broccoli mac & cheese dish. I baked it in one of my mini au gratin dishes, and it fit perfectly. A really nice recipe that I will make again.

Kashmiri Garam Masala

Thanks for sharing. I like to try different garam masala recipes and this one was tops! This is the first one that I tried that used black cumin seeds and fennel. Interesting combination of flavors. I will have to work on incorporating them into my favorite garam masala recipe.

Rice Cooker Crawfish Tails

I started out with good intentions when I stopped to pick up crawfish tails to make this recipe. However, after being delayed in traffic on an empty stomach, I decided to just eat one or two of the already cooked tails. Well one or two led to just about all of them! So, once I got home, I substituted shrimp that I had in the freezer. This is a quick, easy, and delicious recipe. I sauteed the onions and bell pepper in 1 tablespoon of olive oil in the cooker before adding any of the other ingredients. I didn't use butter. Also, rather than add the green onions at the beginning, I stirred them into the rice after it finished cooking. A very good recipe.

Cheerios & Banana Breakfast Drink

This is one of my favorite drinks. I always use Honey Nut Cheerios, but I suspect that any flavor will work well. The drink is thick and satisfying. The banana and the Honey Nut Cheerios are a match made in heaven!

Bacon and Balsamic Glazed Sugar Snap Peas

A nice easy recipe. I used 2 slices of bacon, added a clove of minced garlic and a pinch of red pepper flakes for a little heat. I served this with mashed potatoes, and the Roast Sticky Chicken-Rotisserie Style (from this site). The mashed potatoes were a nice complement to the bacon in the snap peas.

Sweet and Spicy Sweet Potatoes

I made this without the poultry seasoning and thought it was a delicious combination of sweet and spicy. I made another batch of the spice mix without the poultry seasoning and brown sugar to use on the sweet potato fries that I get from Sam's Club. It really livened them up!

Souvlaki

I read the review about leaving out the soy sauce to make traditional Souvlaki, and made two batches, one with the soy sauce and one without. I thought they were both very good. Most of my guest preferred the kabobs made with the soy sauce. The marinade works well with other types of meat. I use it for shrimp (without soy sauce) and marinate the shrimp 15-20 minutes.

Grilled Sausage with Potatoes and Green Beans

Nice easy recipe. I used 2 cans of green beans (drained and rinsed) instead of fresh. Also added minced garlic, fresh ground black pepper, and a little dried thyme. I didn't add the water or the salt and thought the salt from the kielbasa was enough. I will make this again.

Connie's Zucchini 'Crab' Cakes

Great recipe! We really enjoyed these, and it was a good way to use up some of the zucchini from the garden. I shaped mine into little zucchini 'crab' balls and let them sit in the fridge for a couple of hours. Then I deep fried them until golden at 375 degrees. They were delicious. I served them with different dipping sauces, remoulade, sweet red bell pepper sauce, and honey mustard. A huge hit!

Spicy Bok Choy in Garlic Sauce

Thanks to Fishyon for pointing out the error in my recipe. In step 3, I forgot to say what to do with the other half of the oil. Step 3 should read: Heat half of the oil in a large skillet or wok over medium-high heat. Add the bok choy stems first; stir fry for a few minutes or until the pieces start to turn a pale green. When stems are almost cooked, add the remaining oil and the leaves; cook and stir until leaves are wilted, 1 to 2 minutes. Remove from the heat and transfer the bok choy to a serving dish. Pour the sauce into the skillet or wok, and set over medium-high heat. Cook, stirring constantly, until sauce has thickened slightly, about 3 minutes. Pour over the bok choy and toss lightly to coat. Once the recipe is published, Allrecipes will not make changes to it. They suggested that I post a comment here which seems odd since I have to include a rating. Naturally, it gets five stars!

Chinese Napa Cabbage Salad

Nice. I halved the recipe, skipped the seasoning packet, and added a little fresh grated ginger to the dressing to add more asian flavor. I took some for lunch the next day and added in a few pieces of roasted chicken. The noodles still had a little crunch left in them and had that bottom of the bowl goodness! I will definitely make this again. Update: Try serving the toasted ramen and nut mixture on the side and store the leftovers is a small covered container. This way, if there are left overs, the ramen mixture will still be crispy and ready to use the next day. Just make sure the ramen mix is completely cool before storing in the covered container. The only downside to this is, the ramen mix tastes pretty good by itself and makes for good snacking so it might get eaten if left unattended!

Baked Teriyaki Chicken

I used seasoned chicken leg quarters instead of thighs, and used 4 cloves of garlic. I opted to grill the chicken instead of baking it. I grilled it with skin on directly over medium-medium high heat for 10 minutes (no sauce) then finished cooking them over indirect heat for another 45-50 minutes. I started basting with the sauce during the last 20 minutes of cooking. Served this with corn pudding, and southern style green beans. A big hit!

Absolutely Ultimate Potato Soup

I halved the recipe and only used 4 slices of bacon. This made just enough grease to saute the veggies and add a light bacon flavor. I ate two and saved the others to add to the soup. I don't like tarragon and didn't want the taste of cilantro in my soup so I used chives and parsley. I used red skinned potatoes which I think hold their shape better and they don’t give the soup a grainy texture. The recipe turned out very well and comes together quickly. I had planned on only eating a small cup of the soup but it was so good, I ate two cups. I decided to add a little shredded cheddar to the second serving. Delicious!
