Mexican Casserole
made this for my fiance's family birthday party. everyone loveddddd it... and it tasted so good reheated the next day too.

Black Beans and Rice
took some of the advice and added brown rice and 1 can of corn. it can out pretty good. alittle bland. it did taste great with tostitos. i think next time ill try it with yellow rice.

Cheese Lasagna
it was very easy to make. i didn't use as many eggs, only two. and next time i will use more ricotta cheese and sauce.
