Soul Smothered Chicken

Thank you all for reating my recipie. Please keep in mind to use seasoning to cater to your own taste. AllRecipies.com cut down my seasoning mix a lot probably for sodium purposes. Also it may now be clear in the recipie, but add the flour after saute of the vegetables. That way, there are no clumps of flour in the gravy. Also use bone in PLEASE. Happy Meals Veronica

Grandma's Green Bean Casserole

I quadupled this recipie for an office potluck. I was hoping to bring some home, and I was close to not getting my wish. Everyone loved it. I added french onions into the mix and put some on top as well for texture. Make SURE that you get french cut beans and not whole cut. There is a huge difference in how the casserole holds up by using the wrong bean.

Split Pea Soup with Rosemary

This was great even though I did not have rosemary. I used a mushroom base from Better Than Bouillon, added two ham shanks. and blended leaving some peas for texture. Even before blending it had a creamy texture. Thanks for sharing.

Louisiana Crawfish Etouffee

Easy Caramelized Onion Pork Chops

Delicious. I thought the pork chops were a tad dry (I think recipie should indicate what size chops to uee). I cut up chops and covered the in the sauce. removed chops and cooked onions uncovered. Needs more onions. I also added a pinch of sugar. Husband liked it although it was different from the way he likes his pork chops. I will make again.

Slow Cooker Beef Stew I

Made this for my husband. I am not a huge stew fan. I actually made this thicker for him by adding more flour. I took suggestions on precooking meat and adding McCormicks Seasoning. Skipped the wine idea though. He loved it so I am giving it 4 stars.

Chicken Andouille Gumbo

I made this one yesterday. It was my first time ever making gumbo, but WOW! It was total success. I also made alterations to the recipie. I used part of Emeril's Chicken and Sausage Gumbo recipie and used the trinity (onions, bell pepper, and celery). Added 3 cloves of garlic too. My fiance likes his gumbo THICK so you can eat it with a fork. I added an extra pound of chicken, and instead of half a cup of flour and half a cup of oil, Emeril used 1 cup of oil and 1 cup of flour for extra thickness. Roux turned out great, but was time consuming. Being a gumbo lover, I understand that this is the most crucial part of making gumbo so it was okay. I also omitted the tomatoes, because homestyle Lousiana Gumbo usually does not have tomatoes. I also used Tony Chechrerre's instead of the seasoning mix and I used Earl Campbell's spicy sausage instead of andoullie. Also, omitted the okra cause fiance does not like it. My fiance said it could have used more salt, but I am sick (can't taste too much now) and would rather under season it than over season it. He gave it two thumbs and a big toe up. I say that it's a great base for a recipie, but the whole point of cooking is too make it your own. Stop following recipies to the T. Sometimes you have to freestyle a bit to get recipies (especially soul food) the way you want it.

Fried Chicken with Creamy Gravy

WoW! This was absolutely delicious. Best fried chicken I have ever made. I almost added onion to the gravy, but I stopped myself because I wanted to see how it would turn out before I "doctor" it up. Chicken was tender and juicy, and gravy was thick and hearty. Served this with rice and a side of corn. This one is following me to work tomorrow in my lunch. :)

Ann's Shrimp Etouffee

Oh my goodness. I have been craving etoufee and need to make some at 11 at night because I am pregnant and had a craving. This was so good. Thank you so much for posting this so that me, my fiance, and the baby in my stomach have a great meal. I think my fiance was just glad he did not have to find a restaurant open at 11pm that served etoufee. :)

Guy Approved Meatloaf

I really was excited about this recipie and maybe it was my fault because I did not exactly follow the recipie to the t. That is why I am giving this one four stars. However, I just thought it was a bit too smokey for my taste. My fiance, however, loved it almost more than anything I have ever made. So I guess it is guy approved, but I think I like my meatloaf more on the sweet side. Maybe if I made this again, I would use Honey flavored bar-b-que sauce instead of Mesquite.

Mom's Stuffing Pork Chops

WOW!!! This recipie is amazing. I was a bit hessitant to try it because it only has three reviews in two years. I made some minor modifications though. I used Ritz crackers instead of bread crumbs, I used thin cut chops (all I had), omited the water part because I did not want to dry them out, and I put one cup of chicken broth and cooked the dressing on top all for thirty minutes. Yummy!!!

Shrimp Etoufee III

Really good recipie. Turned out great with a few modifications. I made a shrimp stock first and used that instead of water. I also added a can of white crab meat too. Only thing I would change is the amount of celery. I think it was a tad bit too much, but then again I am not a huge fan of celery either.

Southern Fried Cabbage

WOW!!!! After a little incident at the store (I wound up grabbing a head of cabbage instead of a head of lettuce like I had intended to do)I was stuck out clueless not knowing how to cook cabbage, but I knew how it should taste. The was it. I followed the instructions about not putting the extra oil and taking the bacon out before putting the cabbage in. I did not even add sugar. It turned out terrific, Thanks sooo much for this recipie. :)

Easy Meatloaf

This is the third time I have made this. Everytime it is a hit, but I did use half the onions, and boyfriend wanted me to put tomato sauce on it instead of the ketchup mixture. He said that the ketchup mixture made it too. "ketchuppy" whatever that means.

Cajun Catfish Supreme

This recipie was terrific. I too couldn't find the cream of shrimp soup so I made my own. I got a package of white gravy mix, not the Country gravy kind, and I sauteed some shrimp in a tablespoon of butter or two. Then I added green onions and white onions (chopped)and minced some garlic on top and sauteed everything together. What a wonderful aroma! I made the gravy mix, and added the sauteed shrimp mix then let it sit and cool until it was time to add the shrimp sauce to the dish. YUMMY!!!
