About this Cook
We just moved from Wyoming to the panhandle of Nebraska where hubby works. I am a stay at home mommy/wife (first for me, have always worked) with three kids, the youngest who just started kindergarten this year! With my time alone during the day, I'm looking forward to learning how to cook/bake/etc. more things and actually become an o.k. cook!
My favorite things to cook
I found an awesome banana bread recipe on this site that is now my favorite to make. I am still in search for that one thing to make, that I can do very well!
My favorite family cooking traditions
I like that my in-laws are really big on home-cooked meals and making everything from scratch. I like having big family get togethers on the weekends, getting a glimpse of actually how to make homemade gravy, Mexican dishes, crisp salads, and of course my favorite: fried chicken!
My cooking triumphs
My first cake ever made by scratch plus homemade frosting is what my husband still raves about to this day! (Haven't made it since that day.) I did make a good banana bread recipe from this site that he liked as well. Still looking for more recipes to call successes!
My cooking tragedies
Where do I start? I don't know if anyone has done anything more "tragic" than I. There was the chicken I burned, the store-bought pizzas I forgot to take off the cardboard underneath, the meatloaf that I browned the hamburger before baking, the fudge that turned into paste, the too-watery rice, (three cups don't absorb three quarts of water!)and the brownies that I forgot the eggs (tried to add them after in the oven for 10 minutes...didn't work; they started cooking in the chocolate mix!) So, yeah there could be a book about my mishaps!

Extreme Banana Nut Bread 'EBNB'
My daughter made this tonight. She's 10 and her first time at making something homemade. It was easy enough for her to do (while I told her what/hot) and very good! Thank you for an awesome recipe!

Black Bean and Corn Quesadillas
This was so amazing! I just got done making and eating this great recipe. I didn't add the onion as I'm not a fan and I used mexi-corn. Didn't use any butter to heat the tortillas either. I've never had black beans before so was skeptical, but it was wonderful! And I'm stuffed. LOL Thank you!!!

Hearty Ham Casserole
This was pretty good, although it took me awhile just because I'm not a "cook". I couldn't get the flour mixture to work at all the first time...so I just poured flour and milk together n a bowl, whisked it together, then put in the pan. That worked for me! Thanks for the recipe!
