Fresh Tomato Salsa
I would agree with the other reviewer who said this was more of a pico recipe. To have a more "... and you didn't BUY this?" response, add crushed canned tomatoes. Other add-in ingredients are cooked corn, black beans, or jalapeno peppers (sub or in addition to). I also have added bell peppers for color, used both red and yellow onions, etc. You almost can't go wrong. Whenever you have cilantro, lime, and salt in your veggie mix, it will have the overall taste of salsa or pico. It makes a great garnish, I've used it in baked potatoes with shredded cheddar/jack and sour cream, on burgers, in breakfast burritos, and other stuff not coming to mind ATM. The extra "juice" another reviewer referred to I have used in the past as a basis for a skirt steak marinade. Rub the steak with black pepper, kosher salt, chili powder, and some cumin (sub taco seasoning as a shortcut) then toss in a ziploc bag with the juice and let sit overnight. Grill to desired temp (medium) and slice into strips. Sour cream, guac, sauteed peppers and onions with soft shells... you are all set.
