Curried Butternut Squash and Pear Soup
This soup rivals any soup in a high end restaurant. I followed the recipe exactly except I did not add the half and half. It was so rich and creamy without the added fat of the cream. I did add about an axtra cup of chicken broth to thin the soup. My husband stated that I could have thinned it a little more. This is definitely going to be made again. Wonder how well it would freeze?

Jamie's Cranberry Spinach Salad
My family hates spinach! Not now, I used baby spinach and omitted the sesame seeds as I did not have any on hand. My family now requests this salad. I have been making this for several years and it is always on the Thanksgiving buffet.I also have used toasted pecans in place of the almonds. The dressing is what really makes this salad pop.

Mom's Island Treasures
What a great version of chocaolate chip cookies. My husband usually does not like nuts in cookies. He thought these cookies were very good. The mix of coconut, chocolate chips and pecans were wonderful just the right amount.
