Red Beans and Rice
This was very easy and my family really liked it. I used canned diced tomatoes with green chilis, added cumin and chili powder and mixed in about a tablespoon of flour before adding the tomatoes to thicken the sauce a bit. Next time I'll use a larger can of red beand and maybe add some garlic, otherwise it was great.

Fantastic Lemon Butter Fillet
We liked this a lot. I sprinkled the fish with fresh lemon zest and dill weed instead of the lemon pepper. It cooked to perfection in 25 minutes and was very easy.

Super Sausage Gravy
