Raised in Rio Grande Valley - the land of Tex-Mex and moved to Oklahoma City - where meat & potatoes is king. I miss the "Taco Chino" truck in Nuevo Progresso, however, I'm discovering new foods to taste & cook all the time. My most recent obsessions have been authentic asian food and then Irish soda bread with clam chowder. Eggs. Breakfast is my favorite meal. Bring on the breakfast tacos. Making tamales and bunuelos with Mom, Tia, and Abuela. I baked salmon in the oven with lemon and seasoning... it was great for my first attempt. The first time I made barbacoa (cow tongue) in the crockpot, the texture was terrible.
