About this Cook
I'm a happily married, wannabe princess living the good life in Florida. :)
My favorite things to cook
I don't know if it can be considered "cooking", but I really enjoy making deviled eggs because people seem to enjoy eating them so much! It's surprising the reaction received sometimes over something so simple. Makes me wonder if these aren't made much anymore or what? I enjoy taking them into the office now and then as my three bosses are in heaven with a plate of deviled eggs. :)
My favorite family cooking traditions
Growing up, every Sunday was one of two meals. Either a yummy beef pot roast (with potatoes, carrots, gravy, and green beans) or fried chicken (with potato salad). To this day, no one can top my mom's pot roast or potato salad.
My cooking triumphs
I recently roasted a gorgeous garlic and lemon-stuffed chicken with vegetables that was just delicious. And looked like something out of a magazine. I was proud of that. :)
My cooking tragedies
A peach cobbler that I had such high hopes for... which burned. No saving it... right into the bin. :(

Mom's Lasagna
Delicious! I doubled up and made two pans of this for a family gathering and it was a huge hit. I used no-boil noodles to save time and it was a cinch to put together. Then 10 minute sitting time is a must. Everyone had second helpings and raved about it. This is a keeper!

Meatloaf with Fried Onions and Ranch Seasoning
Very tasty! I used the whole envelope of ranch seasoning but otherwise followed the recipe exactly. Came out moist and delicious. My husband had two servings and made meatloaf sandwiches the next night. I'd say this one is a keeper.

Hot Ham and Cheese Sandwiches
Very tasty! I tweaked this a bit just to suit our personal taste - nothing major, though. I used chopped chives instead of the onion (milder flavor), shaved ham instead of sliced, and mild cheddar in place of the Swiss. The spread was easy to mix up and I really liked the horseradish mustard. My husband and I both liked these sandwiches and it was perfect for a quick weeknight dinner. Thanks so much for sharing your recipe, Lois!
