Slow Cooker Barbeque
I've made this a lot and we really enjoy it. I have made double batches for parties and people always ask for the recipe. It is so simple they can't believe it. Sometimes I add a bit of ketchup and some water to it. Delicious!

Cinnamon Roasted Sweet Potatoes
Very good and very tasty. Easy to make too. The hardest part is slicing the potatoes. I had some cut thicker and some thinner and I really enjoyed the crispness of the thin cut slices. It's a nice sweet flavor without a lot of the butter and sugar that are in a lot of other recipes.

Eggplant and Pepper Parmesan Sandwiches
Great taste but we didn't use the olive spread and we would possibly do this as a wrap next time. Depending on the thickness of the bread you may find that a baguette or french bread is too much bread for this sandwich. You could also double the recipe so that there is a better bread to filling ratio. Very yummy otherwise.
