Easy Chicken Parmesan

This was so easy and turned out wonderful! I used fresh bread crumbs (buns grated in my food chopper) and seasoned w/ basil, garlic, salt & pepper. I also made my own marinara sauce, which makes this much better homemade. Will definitely keep this one, thank you!

Best Rolls Ever!

This is the closest I've come to my great grandmother's rolls. The secret to light and fluffy rolls is to not overknead, or they turn out biscuity. These come out perfect with my Kitchenaid mixer every time. It's also even better using bread flour, which makes them lighter and softer. I don't refrigerate over night, instead I let rise for 45 minutes and then dump on floured surface and make into rolls using as little dusting flour as possible. Cover with plastic and let rise again for 30-45 minutes before baking. Be sure to put the rolls about 1 inch apart, being closer together makes for a taller and softer roll. Excellent recipe, thank you!

Mayonnaise Biscuits

These were quite good, and easy! Instead of dropping the biscuits, I shaped them in my hands with a little dusting flour. Not as much work as rolling them out, but came out close to that. Will definitely keep this recipe!

Blueberry Muffins I

I printed this recipe for my 3 kids to make me for mother's day breakfast because it looked easy. Well, it must have been too easy for a reason because they weren't good at all. Very bland, no sweetness at all, and were tough. If you want easy blueberry muffins, stick with Bisquick. I do not recommend this one at all, sorry.

Peanut Butter Balls III

These were pretty good! They soften pretty quick when working into balls, so puting them back in fridge is important! I ended up ditching the spoon and just used my fingers to dip into chocolate. It wasn't easy making a good presentation, but nobody cared!

French Bread Rolls to Die For

The absolute best french bread recipe that I have ever used! For anyone who is a bread maker, this should be the last recipe you ever try. To previous reviewer, you must have used bad yeast or too much flour. The bread flour makes all the difference! I used my kitchenaid stand mixer, and it came out light and perfect. I made 2 loaves out of the recipe instead of rolls, by rolling out with a rolling pin and then rolling into a loaf. I made cracklin bread from it too, with olive oil, chopped up pork cracklins & green onions before rolling into a loaf. Thank you for such a great recipe!

Lemon Lu Lu Cake

The cake was wonderful, the icing had way too much "lu lu" to it! (My guests puckered and shivered!) I believe the lemon juice amount MUST be a misprint. Would be better with maybe 1 1/2 TBLSPN of lemon juice, not CUPS. Still a great cake though and next time I will go with my gut about the lemon juice!

Hush Puppies I

Good recipe if tweaked a little. I cut back the milk to 3/4 c., 1/4 c. water, added 1/4 c. sugar, 2 tsp. salt, and added some chopped up jalepeno pepper. It gave it the little kick it needed.

Chicken Enchiladas V

Excellent! Just the recipe I've been searching for. I added a couple of things and they turned out wonderful. I added a can of Rotel to the chicken after browning, and added a can of green enchilada sauce to the cream of chicken and sour cream. Just the kick it needed. Thanks for a great recipe!

Artichoke Bites II

Pretty good, our guests liked so much they wanted the recipe. I made a few changes by using 6 eggs, and instead of swiss I used mozzerella (couldn't find swiss already shredded!). I also used Italian bread crumbs instead of seasonings w/ plain, and used granulated garlic powder. If you don't like the aftertaste of marinated artichoke hearts, you can use a regular can and saute the onions w/ butter. Turned out great!

Parmesan Spinach Balls

Pretty good base, but I spruced it up a little. I used only 1 1/2 cups bread crumbs, added garlic, 1 T hot sauce, 1 cup sour cream and sauteed 1 cup onion in the butter. I also added some chopped artichoke hearts. I didn't add salt and used only 3 eggs. It gave it much more flavor!

New Year's Day Black-Eyed Peas

First time I've eaten black eyed peas at New Year's and liked them! In fact, we ran out of peas and didn't have the usual uneaten leftovers. I'm not a fan of black eyed peas, but this time I enjoyed them. I didn't add the tomato because of our own tastes, but still great. Thanks for a great recipe!

Black-eyed Peas and Ham Hocks

Needs more water and I cover my pot. I also added chopped onion, a little garlic and creole seasoning. I'm from Louisiana, so the proper way to finish this is by mashing some in the pot and serve it on rice!

Fried Apple Pies

Very good recipe, the apples came out delicious! I too got lazy and used Grands biscuits. I also baked these instead of frying them. I melted butter in a stoneware pan, coated the pies on both sides and baked 5 minutes on each side. They turned out awesome, they were slightly buttery and less fattening. My husband said they were just like his mother's, which was the result I was looking for.

Chess Pie

This actually made enough for 2 pies. It was good, but it came out a bit runny inside. I followed Crivy1's advice and turned the oven off to let it set, so I didn't overcook the top. However, it still wasn't very firm or set inside. But it had a good flavor and was close to what my husband remembered it to be (he's from North MS). I would try again and use cream next time to hopefully thicken it some.
