Fish Tacos
I made these last night for guests. They said they were the best fish tacos they ever had. I followed the recipe, except left the capers out of the sauce and added a little bit of sour cream to the yogurt and mayonnaise. I also made the shrimp and crab enchiladas and they were a hit as well.

Strawberry Spinach Salad I
I made this salad with ribs and roasted potatoes. My guests absolutely loved it and asked for the recipe. The only change I made was to use balsamic vinegar instead of white vinegar--Delicious!!

Mexican Rice II
This was a big hit. Instead of the tomato sauce, I added 3/4 cup RoTel brand diced tomatoes with green chilies. My husband said it tasted better than our favorite Mexican restaurant's Mexican rice.
