There are too many great reviews for this recipe to go through to find the answer to my question.  Since I am going back to work this fall I am looking for recipes to make ahead of time.  My family loves chicken pot pie and I was wondering if anyone has made this recipe the day before or has even put it in the freezer for another day.  THX

I have never made it but I've seen it and it's a good basic pie, but it would lack alot of flavor. Not sure how big your family is, but the way I do mine is to buy a roasted chicken from Costco and we have Chicken Panini sandwiches on night #1. I have half the chicken meat leftover, so I pull all that off and then boil the carcass (actually, I like to use my pressure cooker for this) in a large carton of chicken broth. This makes the BEST broth and is highly flavored. In the pressure cooker, it only takes 15 minutes. Slow simmer would take a good hour. Remove all your chicken bones, skin, etc and strain it. Make a roux with flour and butter and then start to thicken it by adding your cooked broth. As much as you need. In a small pan on the side, simmer cut potatoes and carrots in extra broth and add them to the thickened gravy, add your chicken meat and pop in some frozen peas. Then put it in a casserole dish and cover it with a thawed puff pastry sheet. Bake it at 400 degrees for about 25 minutes and then enjoy. Two meals, for very cheap and they are quick to make! If you don't have a pressure cooker, consider getting one. YOu can do incredible stews, soups, spaghetti sauces in minutes. I make risotto in 7 minutes and it's perfectly creamy and delish.

i have made them and froze them, as i ussually do turkey pies after holidays. I freeze before baking, take out of freezer well ahead of time!i put them in waxpaper then in pie boxes a friend gets from work,after freezing flat then butcher paper it think about making mini ones they defrost faster
