Spinach and Bean Casserole
This is very good, but I used a 14.5 oz can of tomatoes instead and added a teaspoon of Italian seasoning to give it more flavor. I brought it to Thanksgiving dinner and my uncle kept going on and on about how much he loved it; he ate more of this than anything else, even the turkey! It travels really well and looks very pretty and colorful. The red and green might be fun at a Christmas dinner! BTW, I used frozen spinach, thawed and drained, and it was still very good.

Rum and Sweet Potato Casserole
This is absolutely FANTASTIC. I made it on Thanksgiving and now I am committed to forever bringing it for every holiday celebration. It is very sweet and VERY heavy on the rum, so I'd cut back on the rum a little bit if you're not big on a rummy taste. But my family ate the whole thing as is and couldn't get enough of it. It's VERY good! I keep kosher and made it with vanilla soymilk and margarine instead of butter, to make it dairy-free, and it was just as delicious! (Leave the vanilla out if you use vanilla soymilk!) This is definitely a 10-star recipe. Thanks!

Healthy Banana Cookies
These are very, very good and healthy! I used chunky applesauce instead of the oil and spiced rum instead of vanilla. I also added about 1/3 cup honey and another 1/2 cup of oatmeal, and left out the dates. They were SO easy and SO quick!! They didn't make a big mess of my kitchen either; no flour or milk or whatever to spill everywhere. I will definitely make them again!
