Simple Garbanzos
Was looking for some healthy snack/side recipes using garbanzos and came across this. It is delicious! I didn't have lemon so I subbed lime juice, ommitted the peas (don't like frozen peas) and added a little less olive oil and a little more salt. Made them last nigth and marinated overnight to bring to work with my lunch and they are absolutely wonderful!

Cherry Almond Coffeecake
Made this last night, left out the oil and added some almond extract to the icing and the cake batter and it was wonderful. Only problem I had was that I took it out of the oven at about 22-23 minutes and the bottom was very very browned on 1 side, but that was probably due to my crappy old oven.

Saltine Toffee Cookies
I tried this last night and not sure what I did wrong, but they are extra chewy today. I boiled for just over 3 minutes. Even baked 2 minutes longer than stated because I had to run out of the room and didn't hear the timer. I sprayed my pan with butter flavor spray before placing the crackers. Let it sit 20 minutes then stuck in the freezer 20 minutes to set up so when it came out of the freezer it just gave it a little twist and they popped right off like an ice cube tray. No foil or parchment needed. They broke apart pretty easy and it was crisp at first, but now are mega sticky and chewy. Gave it a 5 because it had to have been something I did to make them chewy. Taste great sprinkled with a little sea salt that has been mixed with just a teeny bit of cayenne pepper.
