Layered Chicken and Black Bean Enchilada Casserole
I made this recipe today. I read through a lot of the other reviews and decided to change the recipe just a little. I used the best tortillas... If you are from CA you can buy, La Tortilla Factory Yellow Corn. They are thick & delicious. They don't dissolve in the cooking process. I did stick them in the oven for about 5 mins prior to layering. My dinner guests were satisfied. It was especially funny to some because it resembled a giant enchilada. I would recommend this dish to anyone serving a large group or a lot of hungry children! Suggestion: Use a chicken taco seasoning; and use fresh chicken, not the deli rotisserie! It cooks very quick when you slice it up and saute it. Then just use two forks to shred the chicken after you simmered it with the seasonings.
