A dish for people who are missing the summer--Lotus Root Salad

Sometimes we eat foods which fit with a certain season. Summer is over in Seattle apparently, and I am missing summer for sure. The dish I am going to show you today is actually a perfect summer dish. But I still make it from time to time, as it is simple and a good appetizer. It is lotus root salad.


Ingredient:

2 medium lotus root (you may get it in any Asian marke
t, some markets even have it peeled and in thin pieces)


Sauce:
4 cloves of garlic--chopped finely
3 Green onions--chopped finely
3T Soy sauce
1T vinegar
1t sesame seed
1t red chili power
1/2 peppercorn powder
1t chicken powder


Cut off both ends of the lotus root. Peel the lotus root and then cut it into thin slices. Boil a pot of water, put in the lotus root and boil it for about 3 minutes. While you are boiling the water, get some ice water ready. When the lotus root's ready, take it out of the water, and put it
directly into the ice water.


Put the garlic, green onions, sesame seed, chicken powder, red chili powder and peppercorn powder in a bowl which can withstand high heat. Heat up two tablespoons of vegetable oil and one teaspoon of sesame oil in a frying pan until you can see the smoke coming out. Pour the oil quickly into the bowl. Let it cool down for about 2 minutes then add the soy sauce and vinegar and mix well. Then pour this sauce on top of the lotus root. You are ready to serve!

NOTE:
1) Why put the lotus root directly into the ice water after you boil it?
It decrease the temperature dramatically, and the lotus root would taste more crunchy.
2) Chinese cooking cares about the balance of Yin and Yang, this dish presents the balance of Yin and Yang. Lotus root is considered Yin, and chili powder is considered Yang
