Super-Delicious Zuppa Toscana
Unbelievably delicious. I followed the recipe very closely but used chicken sausage and subbed kale for the spinach and used a full bunch instead of 1/4. We did need to salt to taste. It was better than the chain restaurant's version, and probably much healthier! Will make it again and again.

Mexican-Style Goulash
Fantastic! I substituted ground turkey, added a little extra pasta, garlic powder and green beans. My family declared this a keeper.
