Yummy Sweet Potato Casserole

I not only make this for thanksgiving but we love it so much I've made it on other occasions. I didn't change a think, except cut the recipe in half at times. I haven't found anyone who didn't love this recipe. It is very sweet, but very good.

Taco Soup II

The ranch mix gives this taco soup a off taste. There is another taco soup on here that is great and almost like this recipe.

Cheeseburger Soup I

My fiance and I love this recipe. It's not overly time consuming and it always turns out great. I do not put in the basil or the parsley as I don't like the way basil tasted in the soup. I don't put parsley in anything, as I don't think it adds anything to a recipe.

Baked Scallops

I love Bay scallops and it's hard to find good recipes for them. I love how these turned out. I can't stress enough to make sure the scallops are dry as will turn out in to a lump of goo if they aren't. This happened the first time. I strained mine and used paper towels and squeezed them gently to make sure they were dry.

Asparagus Crab Omelets

Yummy! Just what I was looking for. I made this today and I changed it up a bit. I used 1 can of crab meat since this was for 2 people. I boiled the asparagus for 1 min and let it sit for a few more in the hot water, as I like mine crispy. I sauteed the crab meat and asparagus with a tbsp of butter and seasoned it with kosher salt, pepper (to my taste) & added 1 tbsp of minced chives. I also used the Kirkland brand egg beaters as it is already seasoned and delicious.I also like the McCormick brand Hollandaise Sauce and add in a tbsp of lemon juice. I will definitely make this again!

Grandma's Corn Pudding

This is a great corn pudding recipe. I do however put in fresh or frozen thawed corn in replace of the 1 can and I also like to add a cup of cheddar cheese to it.

Slow Cooker Taco Soup

This is a very good recipe for the person at work all day. I am not a bean person so I only added 1 can of kidney beans, I didn't add any water at all, I also followed others advice and added cumin and chili powder.

Baked Corn Pudding

This is almost identical to my mother's recipe. I made the following modifications: I cut the sugar in half, thawed out frozen corn instead of canned corn (the canned seems to make it soggier), and I added 1/2 cup on sharp cheddar cheese to offset the sugar.

Apple Crisp IV

This is a great base recipe but needs to be modified quiet a bit. I followed others advise with the flour and oats, and adding more apples, cinnamon, lemon and sugar. BUT it is lacking moisture. I would make this again, but would have to saturate the apples so that it isn't so dry.

The Best Lemon Bars

These bars were fantastic! I am not a lemon/sour/tart person and they were very good. I would however suggest to cool off the crust before pouring or being very careful as the liquid broke into the crust and some of it seeped through, but they still turned out.

Maple Salmon

This is by far our favorite salmon recipe. It's different, delicious and soooo easy to make. I used 3 6 oz salmon fillets and doubled the sauce and there was probably enough for 1 more fillet. I didn't change thing and can't think of any way to make it better!

Asian Salmon

mmmmm! The sauce is perfect for 2 people and I like that it is quite different from other's I have tried. I didn't make the rice, but I did follow the advice of others and cut the oil in half and I broiled it the last 5 min. and it worked perfect!

Best Chocolate Chip Cookies

wow, this was a great recipe. I like crunchy, my boyfriend likes soft, so this is a great compromise. I added the tollhouse swirl chips (white and milk chocolate) 1 1/3 cup they were delicous and just the right amount of sweetnes. You must try this recipe.

Enchiladas

These were very good! I was a little scared to make it with the odd mixtures, but I followed someone else's advise and put in 1/2 sour cream, 1/2 yogurt with the cream of mushroom. I also added 1/2 mozzarella and 1/2 sharp cheddar cheese. The servings say 6, but I made it for 3 and there was none left over!

Crabmeat and Corn Soup

This recipe was okay but it had to be modified quiet a bit. It was fairly bland, I added cayenne, thyme, chicken broth, kosher salt, white pepper, and a little tabasco. I also added potatoes to mine.

Spicy Beef Curry Stew for the Slow Cooker

I took the 2 most helpful and combined them. This wasn't anywhere near as spicy as the reviews, in fact I tripled the amount of red curry paste, threw in 3 jalapeños AND added in 2 tbls of fresh ground red peppers. While this recipe was ok, it isn't something I would make again.
