I skipped the oil and tossed the nuts in 1 egg white. 4-6 cups of almonds will work with 1 egg white. Drain the nuts if its too liquidy if only using 2 cups of nuts. I used this spice recipe for 2 cups, and then variations of spices for 2 other batches (cinnamon, allspice, cocoa). It needed to be cooked longer than suggested. I doubled the cooking time, but I should have cranked the heat up to 400 and kept an eye on them for a speedier solution.
