Fluffy Pancakes
truly a wonderful pancake recipe. My husband has been the pancake king in our house for a few years with his storebought mix, but this blows them out of the water. Definetely let the milk sour for 10-15 minutes. I used powdered sugar in place of granulated for a lighter pancake. Left out butter-couldn't tell. Added vanilla (1 teaspoon for recipe as written). Then I let the whole batter sit for over 30 minutes. Make sure griddle is hot (a bead of water should jump when dropped on it), then turned heat back to about med/med-high. Used 1/4 cup measuring cup and got 18 good size pancakes out of a double recipe. I was blown away by how tasty my pancakes were. I doubled the recipe and it was perfect for my 3 little kids and I. As they get bigger, or when daddy is home with us, I'm sure I'll have to triple it.
