About this Cook
I'm 29, a mom of two (3 year old son and a 1 year old daughter), have a wonderful husband of 5 1/2 years and we live in AZ. I never thought I'd stay in the desert, but here I am, 10 years after moving from small town Indiana. My cooking inspriation came about 5 years ago when I was working with a French lady who shared a few of her own wonderful recipes with me. I love to try new recipes - and I have a family of good sports who are always open to the new dishes I bring to the table.
My favorite things to cook
I love to cook anything that brings happy faces and compliments to the cook! I guess that is what makes cooking so enjoyable - to see everyone enjoying the food I prepare - and to hear what they liked about it. There is something to be said about sitting down and enjoying a meal you've prepared and the taste sensations are like fireworks in your mouth.
My favorite family cooking traditions
None really yet.
My cooking triumphs
Chipotle-Peach baked Tilapia topped with a mango salsa and served with rice: Tilapia Chipotle Peach grill sauce (or any Chipotle variation) Italian Salad Dressing 1 1/2 cups chopped Mango & Peaches (fresh are best - but can use frozen) 1-2 Tablespoons of Olive Oil 1 Red & Yellow bell pepper 2 cloves Minced Garlic 3-4 Green Onions 1-2 Tablespoons Soy Sauce Salt & Pepper to taste Try Calrose Rice - since I switched - never have gone back to long grain white Bake Tilapia in grill sauce & italian dressing mixture On the stove, combine olive oil, garlic and bell peppers until semi soft, add green peppers and fruit with soy sauce, salt & pepper until heated through. Serve fish over rice with a little bit of grill sauce/dressing over that and top with mango salsa
My cooking tragedies
When I was a child, my dad and I tried making Carrot bread. It turned out so bad that even the dog wouldn't eat it.
