About this Cook
I'm a stay-at-home mom to a terrific toddler (2 yrs old) who is a terribly picky eater. (sigh) However, my husband and I love food; especially pastas, soups, stews, and ethnic foods such as indian, thai, etc..prior to having kids we dined out a LOT- I was not a cook--but, since becoming a mama myself, I am learning and enjoying this process more and more and more. Most recently, I have discovered that I enjoy baking, although I have lots to learn yet. I am excited to find new recipes/ideas and meet others on this website! :)

Cream of Cauliflower Soup II
I love soups and this is one I will add to my go-to list. I only used 2 cloves of garlic (I didn't want an overpowering garlic taste), and I also only used 2/3 cup of milk. Next time I may use cream instead as I felt like it could have been just a tad bit creamier. I found my emulsion blender really came in handy so that I did not have to transfer batches over to the food processor, and also like some of the previous posters mentioned, I left out a cup of the veggies so as to add a bit to the texture in the end. I topped it with monterey jack shredded cheese instead of the parsley. Very good, and will make again.

Buckeyes I
MMM...being from Ohio originally, I grew up with these things! If not from Ohio, I think they are most commonly referred to as 'peanut butter balls'. Whatever, they will always be buckeyes to me! :) These are super sweet and divine- I use dark chocolate disks because I love dark chocolate, and I don't have a double broiler, I just melt the chocolate in a small pan or microwave it. When the chocolate gets too cool, I re-heat it. Also, make sure the peanut butter balls are FULLY refrigerated/cold. I had a few times in which the peanut butter balls would just slide off the toothpick if not. These are one of those treats that I just can't stop eating or thinking about once they are made. Enjoy!!

Buffalo Chicken Dip
Great, easy appetizer recipe. I like to use Texas Pete's hot sauce. Whenever I have made this for guests they have loved it- it is one of those that EVERYone seems to ask me the recipe for. Definitely a good one for game day!
