About this Cook
Well I enjoy cooking, of course. I made a profession out of it for over 10 years. I have since taken a break from it and I am currently enjoying other aspects of life. I may return to it someday, but for now I'm focusing on opening my own business of a different nature. I also spend a lot of time traveling. Going anywhere to the Caribbean is my favorite. I'm also a hockey fanatic. Whether it's watching it on tv or at the game you can find me rooting on my team and enjoying a cold beer. I also enjoy photography and have recently started to grow/raise banana trees. I love the tropics and anything tropical.
My favorite things to cook
I enjoy preparing just about any dish. I guess if I had to pick a favorite it would be desserts. As a professional chef I'm more about presentation.
My favorite family cooking traditions
Don't really have any family traditions of cooking. All of my skills/talent came from learning the little tips, tricks, and secrets along the way in my years in the culinary career.
My cooking triumphs
Cooking Filet Mignons (all to different specs/temps), side salads, and side dishes to match for a catered party of 50 in 30 minutes and without one complaint.
My cooking tragedies
Once was preparing a batch of salad dressing that called for a significant amount of sugar and accidentally used salt... LOL! Nevertheless, I'm sure you can guess the outcome. Yes, even pros make mistakes.

Peanut Butter Cup Cookies
These are a staple in my house every Christmas. I love them. I have my own little tweeks, but overall they are perfect.

Peanut Butter Bars I
These are pretty good. Whatever you do though do NOT melt the peanut butter. It breaks down the peanut butter and makes it "greasy" and add that to the already too much butter and the crust comes out too "gooey". I can't stress this enough... DO NOT melt the pb with the butter. In my opinion the recipe calls for too much butter. I would suggest dropping it down to 3/4 cup of butter. They came out way too rich. Tips and tricks: If you want you can add a couple tablespoons of milk while melting the chocolate to thin it out a bit and it won't make it as rich. Adding peanut butter to the chocolate (while melting) is pointless I think. I didn't add the pb to the chocolate and it came out just fine. Not bad, but if I make them again I will use a few tweeks for the recipe.

Apple Pie by Grandma Ople
One of the best apple pie recipes I've came across (and I don't like apple pie). The only difference that I do is that when I cut/core the apples I mix them with cinnamon and sugar and mix in the "topping" that the recipe calls for. If you just pour it over the top of it... (it doesn't seep in) then it tends to bake out and makes a mess. So, cut your apples... mix the apples, sugar, and cinnamon and then "mix" the "topping with that. Then place in the pie shell. It's up to you what to make for the top. I use lattice, but anything is possible. It's a great recipe. The result is up to you... you can do a lot with this recipe.
