Ann's Shrimp Etouffee
So so yummy and so so healthy and so so low in calories! I scaled this down for 2 people. I added 2 green bell peppers to make it a little more authentic. I also used olive oil instead of butter. I served over brown rice cooked in low sodium chicken stock. Another thing I did was make a quick shrimp stock to use in place of water. I took the shrimp shells and put them in a bowl of water, microwaved for 3 minutes, and let sit until I was ready to add the water. Definitely a keeper recipe.

Actually Delicious Turkey Burgers
Ok, these are not better than beef but they are definitely the best ground turkey concoction I have ever had. I don't usually care for ground turkey at all but these are a keeper. If you have trouble with the burgers falling apart your onions might just be too big. They need to be diced pretty small. Or even grated in. I served these on Arnold Sandwich Thins (100 calories for the whole roll!) and topped with lettuce, tomato, raw onion, and buffalo chicken marinade. My husband gobbled them up. Definitely a keeper!

Baingan Bharta (Eggplant Curry)
This was good. I cut my eggplant in half and cooked for 15 minutes. Next time I will start checking at 10 minutes b/c I'd like it to be a bit firmer. The cilantro is really key because it brightens up the flavors and adds another layer. If you don't have or don't care for cilantro try subbing flat leaf parsley or a squeeze of lemon juice. I served this as a main dish with brown rice and naan. 2 servings of the curry plus one serving of riche and half a peice of store bought naan added up to 620 calories. Was a filling meal that I will definitely make again. Next time I will serve with a grilled chicken breast or maybe shrimp.
