Stuffed Peppers with Turkey and Vegetables
About 5 years ago, an acquaintance gave me a recipe similiar to this that was absolutely to die for. Well, 2 moves later, I lost it, and have been trying to recreate it for years. This is ALMOST as good as that old one! First, I steamed the peppers for about 3 minutes instead of baking - they turned out perfect tenderness. I ommitted the spinach and mushrooms, and reserved the juice from the tomatoes. I combined all ingredients (except peppers to be stuffed), and added tomato juice (with added water, enough to make a full 1 cup) and brought to a boil. Then, I added 1 cup Couscous and removed from heat for 5 minutes. After filling, I topped with a pinch of Mozzarella cheese before baking. Turned out GREAT!!
