Potato Leek Soup III
Great recipe, thanks for sharing. We had this tonight with meatloaf. I kind of made it as is, but added a few things...bacon of course. I cooked that first then cooked the leeks in a little bit of the bacon fat with a few pats of butter added. I boiled the potatoes and mashed them with the leeks, bacon, chicken broth, little white wine, and cream..and garlic powder. Used my immersion blender to smooth it out. Great and easy recipe. Hardest part was cleaning the leeks...I sliced them and then cleaned them in a strainer and dried with paper towels.

Meatloaf with Italian Sausage
I've always done my meatloaf this way - have it in the oven right now. I do a few things differently - use the meatloaf mix with italian sausage.. dump it in a big mixing bowl with an egg, diced onion, minced garlic, worcestershire sauce or I sometimes use oyster sauce instead, garlic powder and italian seasonings, bread crumbs and some shredded cheddar. I serve it with marinara sauce on the side... its delish.

Tater Tot Casserole I
It's a crowd pleaser! Made this for a family brunch this morning. Very similar to my go-to breakfast casserole recipe, which uses bread, mustard, swiss. I doubled this and used twice the sausage, six eggs, eye-balled the half and half, it was maybe a cup, added a few spoonfulls of cream cheese and sour cream to the egg mix and seasoned it with salt, pepper, garlic powder, and a little cayenne. Served with green onions on the side. Very easy and delicious..thanks for posting it.
