Savory Chicken Sandwiches
I love this recipe because it's simple and it is versatile. The children and grandparents raved about it. For adults that wanted more flavor, we added our favorite barbecue sauce, cheese, onions, and pickles or jalepenos to our sandiwch. Great to prepare for a week night dinner and then have great leftovers for lunch. I've made it as written, but have found that using frozen skinless, boneless chicken breasts is the easiest. I was concerned about it drying out without the thighs, so I added about another 1/4 cup more water. Very good recipe, thank you.

Pepper Jelly Appetizer
I've made this twice. Each time I used different kinds of jalepeno pepper jelly, and it was gobbled up - people couldn't get enough. I now keep a jar of pepper jelly and the cream cheese on hand for a quick appetizer for surprise company.

Garlic Parmesan Orzo
My kids (age 10 & 12) loved this and both wanted seconds. It's good comfort food and works as a great side item. It's also versatile and can be altered to one's tastes (or what groceries are in the house - mushrooms, fresh basil, sun-dried tomatoes, artichokes all work well - but the kids like it best as posted). Thanks!
