I love to make Pomodoro Pasta with Brechetta. My Deep Dark Chocolate Cake is a big hit!
My favorite family cooking traditions
Favorite tradition is making homemade blueberry mickey mousie pancakes with my sons! My oldest always wants to help stir in the berries. We make these every birthday breakfast and the Deep Dark Chocolate Cake for the Bday cake. I make them 1 very special cupecake out of the batter...mini cake :O) At the holidays my Candied Brandied Apples are always requested.
My cooking triumphs
My triumph is my hubby saying "WOW" or calling his mom to tell her about what I made and how awesome it was!
My cooking tragedies
It was a tragedy when I made brownies at home and took them to my friends house (her fam LOVES brownies) to bake them because she was making dinner for my family. I wanted the brownies to be hot out of the oven. They were burnt on top and raw in the middle!!!! I don't know what happened but she had a super high tech oven and I messed them up! No brownies :( I still get teased about that and need to redeam myself.

Streusel Coffee Cake
I am only reviewing the streusel topping and icing. I used these with the Quick Coffee Cake submitted by Stephanie from this site. I loved the topping and so did my Hubby! I mixed it throughout the cake and on top. I am saving this for sure.

Quick Coffee Cake
I have to say this is a 5 star with the part of the Streusel Coffee Cake by Jim Blamker from this site. I used the topping and icing of that recipe. I kind of combined the 2. I did follow the other reviewers on this and do 1/3 cup white sugar, I used butter not shortening, I added pumpkin pie spice a little ground ginger and extra cinnamon. I feel this would have been a complete bore with out it. There would not have been enough flavor to this cake. If you do take my advice use this combo all mixed up in a little bowl: 1C chopped pecans 1C packed Brown Sugar 1/2 t cinnamon and 6 T butter softened I put this on top of this recipe and ran my knife up and down the pan to get some of this mixture throughout the cake. I would also check the cake at about 40 minutes mine was a little too brown on the bottom for me but still awesome!!!!

Apricot Cream Cheese Thumbprints
I have been using this recipe for about 3 years. They are always a big hit. I end up getting a lot of cookies out of the recipe so I drop them off to very excited family. I love to do these with red raspberry jam and apricot and apricot pineapple I make different flavor batches. I did try with some strawberry one time and did not like it at all. I do increase the lemon juice and zest about 2.5-3 Tablespoons of each. Also these are pretty labor intensive so I chill the dough overnight and make the cookies the next day. Also do not over work your dough and keep an eye on the first batch sometimes mine are done at about 13 minutes. I dust with powder sugar after they cool a bit. And don't try them straigt out of the oven I always can't wait and burn myself b/c the jam is so hot!! Happy baking!!
