Salsa Chicken Rice Casserole
Awww yeah! This recipe puts the roll in the casserole!! Owww! This recipe will definitely be worked into the rotation!! Grazie!! ~Here are some slight adjustments we gave a whirl: We satuee'd the chicken with green onions and chili powder, added one can of cream of mushroom soup, omitted the cream of chicken soup and cheese, used cowboy caviar instead of salsa, added black olives, cumin, and jalapenos. Next time we want to use salsa and black beans. Bon Appetit!

Spicy Bean Salsa
This was really great! I made this the night before Thanksgiving and the next day it was perfect. I fixed it with lower fat dressing though and still everyone thought it was really tasty. I will make this again. It does make quite a bit. More than your average salsa jar. My husband said it reminds him of poor man's caviar.

Garbanzo Bean Chocolate Cake (Gluten Free!)
*~The Wifey whooped this up for me for my birthday and it was grrrrrrrrrrrreat!! When I first saw 'garbonzo,' I thought it would be a flop but instead it was the tops!! Yummm! The gonzo garbonzos gave the cake a nutty flavor. I ate my pieces covered in whipped cream. Next time we're going to make two cakes, one dark chocolate and one peanut butter, then layer the cakes and slap some fudge frosting all over it. Oh yeah, it'll be tops!! Like John Lee Hooker said,"Now we COOKIN!!! Thank you!!!~ We used dark chocolate instead of semisweet chocolate chips and 2 cups cooked gonzo beans instead of the can.*
