Thanksgiving Leftovers Stuffed Shells

Great way to use up three Thanksgiving leftovers. My gravy was pretty thick, and I would suggest thinning it out with leftover chicken stock or milk. Also, I added a few pieces of leftover sliced cheese cut into thin strips.

Thai Chicken Curry with Pineapple

This was good, but WAT too bland. Add more curry, i would get 50% more. When you add the coconut milk, let it simmer longer, so that it reduces, that will help intensify the coconut flavor. Other than the above it was good. I added bamboo shoots because I love them. I also had some basil on hand, I chopped that up and added it at the end, along with the pineapple.

Noisemaker Appetizers

This was a really fun app that I made for New Year's Eve. It's festive and tasted great. It came together faster than I expected, and once you got a rhythm with rolling the wrappers it went quickly. The tip about using tweezers was great because some of the foil pieces do get stuck. For the filling I added a little extra sour cream and lemon juice to thin it out, and lots of black pepper for flavor. Next time I'll add parsley or chives. To dress it up, I sprinkled black sesame seeds on the filling.

Lemon Bundt Cake

This cake turned so nice and moist. I made it for a bridal shower and put yellow roses in the center for decoration. It got rave reviews at the office. I couldn't find lemon pudding, so I used vanilla and added the zest and juice of one lemon, as well as 2 t. lemon extract. It wasn't too lemony, it was perfect, and had a great yellow color.

Spiced Pumpkin Seeds

I have been making these seeds for years and they are best warm out of the oven. I have my own special process for preparing the seeds because they should be dry before roasting, if they are still wet they will just steam. Clean your seads well, I find a colander words great, and let them drain overnight in the colander. The next morning spread them out on a foil lined cookie sheet. Let them sit for a few hours, then pour them off of the cookie sheet, and replace the foil, you will find that the foil was wet. Spread the seeds out again of a fresh sheet of foil and let them finish drying for a few more hours. They are finally ready to toss and roast.
