New mother to a beautiful, energetic little boy. He just turned a year old in Sept. I'm having to adjust to motherhood. My life is turned upside down (in a good way) and I'm trying to find balance. Learning healthy things to fix that are quick and easy for both my son and I. Things to fix and eat "on the run" are ideal for us. Need to loose 60 lbs. (YIKES!) so eating healthy and exercising are a MUST.
My favorite things to cook
I'm a HUGE fan of the slow cooker, I LOVE it!!! Stews and roasts are a favorite in the winter along w/ chili. I enjoy casseroles and Mexican food as well. Since I'm having to eat healthier I'm going to have to find new favorites, but man, I love my Mexican food!!! Also love to bake goodies @ Christmas time.
My favorite family cooking traditions
It's all new for me right now. I'm developing traditions as we speak.
Chili, stews, roasts and casseroles in the winter. Baked breads and cookies around the holidays. Lots of salmon and shrimp dishes in the summer along w/ salads and fruit. Cevichie ALWAYS!
My cooking triumphs
Baking perfect zucchini and lemon bread. Awsome chili and stews in the slow cooker. And I make awsome, easy chicken enchiladas and beef tacos.
My cooking tragedies
Several Italian dishes. Good thing I'm not that into Italian food. Also,
lemon bread. Not very good at frying food either. I get splashed w/ oil, use to much, etc. Ends up being a very painful experience!
