Can't Get Enough Caramel Cookies!

These cookies turned out really yummy for me after following the recipe exactly. I used store-brand quick-cooking oats and spread the mix on a flat baking stone. It was bubbly when I removed from the oven after 8 minutes. I think it was too hot when I cut it because it didn't cut very smoothly but it hardened as it cooled and the cookies were awesome. I did use a spatula to remove the cookies from the stone because they threatened to crumble - these are very delicate. Hubby and friends thought they were fantastic, as did I. Probably not the best thing for your figure, but sometimes you've just got to forget about your figure and indulge your sweet tooth. I will be making these again.

Sour Cream Cheese Casserole

Very easy to make, but not so easy to eat. I love all the ingredients, but this casserole made them taste gross. It would have helped if the cracker crumbs were crispy, but they were very soggy. I won't be trying this one again.

Herbed Pork and Apples

Made this for our Super Bowl party and it was a huge hit. I thought it was excellent! Shortly after that I ordered pork chops with apple chutney at our local Moose lodge and it was the same recipe! It was just as delicious as when I made it at home. I'll definetely make this again.

Mexican Style Cornbread

Baked Potato Salad II

The chunks of Velveeta in this recipe make for some nasty bites, so if I make this again I'll use shredded cheddar instead. I think it would be pretty tasty that way. I also omitted the olives.

Awesome Honey Pecan Pork Chops

Delicious! I love the sweetness combined with pork. The sauce hardens quickly and does stick to your teeth sometimes but to me it's worth it because it tastes so great. I double the sauce.

Delicious recipe, I decided to make chicken strips instead and it ended up being mostly batter, not enough chicken. If I make this again I'll leave the chicken breasts whole

Christmas Creamy Egg Nog

Made a double batch of this for a Christmas party and it was a huge hit! I added a little more sugar and used coconut rum (more than suggested, plus I left the bottle out so guests could add more if they wished). I'll definetely be making this next year!

Chicken Enchiladas I

Of all the chicken enchilada recipes I've made from this site, this one is my husband's favorite. I modified it a little after reading reviews and turned it into the perfect recipe for my family's tastes. I shred my chicken rather than cubing it. To avoid a watery mess, I only use an 8oz can of tomato sauce and omit the water completely. I use half a tablespoon of hot chili powder and substitute the green pepper with a can of chopped green chiles. Then I substitute the taco sauce with a can of red enchilada sauce. Yummy!! Be sure to grease the pan first and/or sperad some of the enchilada sauce over the bottom and sprinkle more cheese over the top before baking.

Ham, Potato, and Cheese Soup

This recipe is perfect! I've been searching for the perfect potato soup recipe and this one is so simple and yet so delicious, I'll be making it often. I only used one onion instead of two because my family doesn't care much for onions and I added a clove of minced garlic. Yummy!!

Cheesy Chicken Pot Pie

This recipe was super!! After reading reviews I baked the bottom crust for 10 minutes to prevent sogginess. I added diced potatoes and parsley and substituted corn for the peas. I made small cutouts from the top crust using mini cookie cutters instead of cutting slits in it to vent, then baked it at 350 instead of 325. Let it set for 15 minutes to firm up the filling before cutting. I doubled the recipe and froze a pie for my sister's family after the birth of her baby and her husband fell in love with this recipe. I'll be making this one for years to come!

Fluffy Canadian Pancakes

These pancakes tasted good (I used one less egg yolk) but were no fluffier than any other pancakes I've made. Yummy with Cinnabutter and butter pecan syrup.

Texas Deer Chili

I changed a few things in this recipe such as using ground deer meat, adding a diced jalapeno pepper, doubling the amount of beans, and adding 2 cans of diced tomatoes. Turned out pretty good.

Delicious Pumpkin Bread

Excellent recipe! I'll make this again and again. Using my Pampered Chef stoneware I was able to make a loaf and 4 mini loaves. Very moist and delicious.

Pico de Gallo Chicken Quesadillas

Very delicious recipe! The pico de gallo is excellent with or without the jalapeno; I eat it with chips and add it to my guacamole dip. My family loved the quesadillas. I shredded my chicken and used orange pepper instead of green which gave it a sweet taste. Yum Yum Yum!! I definetely recommend using a plate to flip it or else you'll wind up with a big fat mess. I also serve mine with guacamole (Best Never Forgotten Guacamole).
