Pecan And Chocolate Espresso Pie

This came out tasting great. I did modify it a bit. I used a teaspoon of instant coffee dissolved in a tablespoon of water and then added the eggs. I used a ready-made pie crust and pre-baked as directed. After following the directions carefully, it was still rather runny so I added another 1/4 cup at least of cocoa and also about a 1/4 cup of cornstarch and beat those in well in the mixer. I also sprinkled the top with some sea salt just because I wanted to. Then I thought I was turning down the heat from 400 degrees to 350 degrees after the first 10 minutes but accidentally changed the timer instead. About 20 minutes later I could smell the crust getting brown so I opened the oven to add a cover around the edge and realized what I had done. I could tell the pie was ready so I took it out and cooled it almost completely before slicing. It was just a little warm and stayed together very nicely and tasted very good. We ate it so fast that I was planning to add some whipped cream. Maybe next time because I'll make this again.

Crunchy Oven Fried Tilapia

Spray foil with PAM, then after putting prepared fillets on foil spray and then sprinkle with olive oil. Bakes up crispy. I used pancake mix and cornbread mix for ease and put much more seasoning. Really tasty.

Spinach Tomato Tortellini

This was very good. I used small cheese ravioli but that doesn't really matter. I also added some Italian sausage and some more fennel seeds and red pepper flakes. And thickened it was a little cornstarch mixed with some milk.

Sausage Red Beans 'n' Rice

This is truly a 30-minute meal. I used canned pinto beans with jalepenos and added some more hot sauce to my bowl, but extremely well received by my husband who ate two bowls.

Chicken Thigh and Dumpling Stew

This was excellent but I was in a hurry so I left the thighs whole. Next time I will take the time to take off the meat but I think this would be best served without the dumplings (although my husband loved them and I use flour tortillas cut in bite-size pieces and cooked in the sauce until they are soft). I am thinking this would be great over toast.

Chocolate Oatmeal Cake

Excellent recipe. I used some chocolate oatmeal packets for the oats and that worked out great. They included some flax seeds but the extra texture was not a problem. For the frosting, I didn't have any instant coffee granules so I just brewed some strong coffee and let is cool. I also used some shortening in place of part of the butter and it was fluffy. My daughter has requested this cake again this weekend. I think I will make it as cupcakes and just put powdered sugar on some and frosting on the side to add to others.

Curried Tuna Melt

Multiplied the curry several times, used diced apple instead of green onion, hot mango sauce instead of lemon juice and added some mango chutney. It was great. Obviously this is a recipe that can stand up to some changes because of what ingredients I have on hand. I'll make this again.

Spicy Chicken and Sweet Potato Stew

This is really good. I used black beans instead of kidney beans and didn't use the cilantro - personal preference. I also used cubed raw chicken thighs which I sauteed with the onions. I think this would also be great with pork. Gets better every day.

Pork Medallions with Port and Dried Cranberry Sauce

The pork was fine but I had to add ingredients to get the flavor up in the sauce. I did not have port so I used red wine. I also added Mango hot sauce and some cranberry horseradish to give it more heat and sweet. Excellent product in the end and gave it a more "chutney" flavor and texture.

Cranberry Sweet Potato Bake

I made this for Thanksgiving and it was well received by almost all the guests. In my small town, the grocery store doesn't carry granola but I used some Kashi cereal and it was good. I just sliced my sweet potatoes into rather thin rounds after peeling and layered with the other ingredients and baking until the potatoes were tender then added topping when reheating the next day. In my very traditionally minded family, several asked for the recipe.

Hot and Sour Chinese Eggplant

I tripled or more the sauce and added green peppers, onions and zucchini along with sauteed chicken. It was tasty but not hot and spicy. I'll need to increase the heat with red pepper flakes next time.

Mexican-Style Goulash

I did add cumin, a small can of chopped green chiles and a can of drained black beans but this was a hit with my daughter's friends. I doubled the recipe and it produced at least 10 servings quickly and economically. I'll make this again so I can try it.

Spicy Cuban Mojo Chicken with Mango-Avocado Salsa

Superb. I did chop the avocados and mango and added some chopped red pepper to make more of a salsa. Didn't have orange juice so I used Simply Lemonade, added Hot Mango Pick-a-Pepper sauce and honey for the sauce over the chicken. Mmm. Delicious.

Pineapple Orange Sorbet

Instead of plain orange juice, I used the real orange juice with mango. I used Splenda for the sugar and also canned pineapple sweetened with Splenda and the sorbet was very good. But even better was the smoothie I made with the leftovers. I placed the frozen sorbet in my Ninja pitcher and added Lala brand Mango yogurt. Blended until thick and so delicious. So delicious and refreshing in the plu 100 degree Texas weather. I don't know if I will ever eat this as plain sorbet ever again.

I had all the ingredients (except the carrots) picked fresh from my garden and waiting for to be used in a new recipe. I cubed and salted the eggplant and then prepared the remaining vegetables. Sauteed everything together low and slow stirring frequently, added salt and red pepper flakes and it was finished. I didn't chill it, just ate some on Multi-Grain Club crackers while still a little warm and it was very delicious. A great us of eggplant.
